1cupof shredded cheddar cheese
Instructions
Peel, wash potatoes, and cut up into cubes.
Toss with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).
Cook potatoes in the air fryer at 400 degrees for about 20-25 minutes shaking them around at least a couple times while they cook.
Once potatoes are cooking, cut chicken into cubes.
Add 2 tbsp of butter to a skillet over medium high heat. Cook sliced onions and green peppers until they are tender.
Add the chicken to the skillet. Season chicken with salt, pepper, paprika, onion powder, cumin, and red pepper flakes.
Once the chicken is finished cooking add the minced garlic and about 1/4 - 1/2 cup of Southwest Ranch sauce.
Add cooked potatoes to the skillet and stir everything together. Top with shredded cheese.
Broil in the oven for just a few minutes to melt the cheese (you could also cover with a lid and let this sit on the stove until cheese melts). Top with a drizzle of the Southwest Ranch and enjoy!
Notes
If you don't have an air fryer the potatoes can be baked in the oven at 400 degrees for 25-30 minutes or until they are cooked to your liking. It helps to stir the potatoes at least once about half way through cooking.
