Southwest Ranch Chicken and Potatoes

These Southwest Ranch Chicken and Potatoes are easy to make and so good! This is an easy dinner recipe that can be made in under 30 minutes! Meat and Potato skillets always go over well with the family.

Chicken, green peppers, onions, crispy potatoes, cheese, and Southwest Ranch sauce are the main ingredients used in the dish. The chicken cooks in a skillet while the potatoes get nice and crispy in an air fryer.

Southwest Ranch Chicken and Potatoes

Ingredients

  • 1 lb chicken breasts
  • 5 small/medium potatoes
  • olive oil + salt, pepper, garlic powder, and smoked paprika (for potatoes)
  • 1 onion
  • 1 green pepper
  • 1/2 tsp each of salt and pepper
  • 1 tsp each of smoked paprika, cumin, and onion powder
  • 1/4 tsp red pepper flakes
  • 2 TBSP butter
  • 1 TBSP minced garlic
  • Buffalo Wild Wings Southwest Ranch
  • 1 cup of shredded cheddar cheese

Make the Crispy Potatoes

To start making this recipe peel, wash, and chop about 5 small/medium sized potatoes. Try to chop the potatoes into evenly sized pieces so they cook evenly.

Add the potatoes to a large bowl and season with 1-2 tbsp of olive oil and salt, pepper, garlic powder, and smoked paprika. I don’t use exact measurements for the seasonings on the potatoes. You just want them to be coated in olive oil and seasonings.

Once the potatoes are well seasoned, add them to an air fryer and cook at 400 degrees for 20-25 minutes. Shake the potatoes around in the air fryer at least a couple of times while they cook.

If you don’t have an air fryer you can bake the potatoes in the oven at 400 degrees for about 25 minutes or until the potatoes are cooked to your liking. It helps to stir them around half way through cooking.

Cook the Chicken

Once the potatoes are in the air fryer, chop one onion and one green bell pepper. Cut the chicken up into small cubes.

Heat a large skillet over medium high heat, melt 2 tbsp of butter, and add the chopped onion and pepper. Cook the peppers and onions until they soften.

Once the peppers and onions are cooked, add the cubed up chicken to the skillet and season with salt, pepper, smoked paprika, onion powder, cumin, and red pepper flakes.

Stir the chicken and seasonings well. Let cook until the chicken is cooked through. Once the chicken is cooked turn the heat down to low and add one tbsp of minced garlic.

Add about 1/4-1/2 cup of the Buffalo Wild Wings Southwest Ranch sauce. You can find this sauce at Walmart or it’s also on amazon. You really just need enough sauce to coat the chicken.

Serve Southwest Chicken and Potatoes

Once the potatoes are nice and crispy, pour them from the air fryer into the skillet with the chicken, peppers, and onions. Stir well and top with about one cup of shredded cheddar cheese.

To melt the cheese you can let the skillet sit on the hot burner or pop it in the oven under broil for just a couple of minutes if you are using an oven safe skillet.

Once the cheese is melted, top the skillet with a little bit more of the Southwest Ranch sauce.

I don’t always serve a side with this, but some green beans, roasted vegetables, or a salad would be a great easy side!

Tips and Frequently Asked Questions

  • I’ve used cheddar cheese, mozzarella, and Monterey Jack cheese in this recipe, and all are tasty and melt well.  
  • You can use regular paprika or smoked paprika in this recipe. I like keeping this on hand because it is mild and adds flavor and color to many dishes.
  • If you don’t have an air fryer, you can roast the potatoes in the oven.  Cook the potatoes at 400 degrees for 25-30 minutes. It also helps to stir/flip the potatoes half way through cooking.
  • I’ve made serveral variations of this chicken and potato skillet. If you aren’t a fan of BBQ sauce you could use buffalo sauce, garlic Parmesan sauce, or honey mustard!
  • Be sure to cut the potatoes on the smaller side and try to cut them all the same side so the potatoes cook evenly.
  • The Buffalo Wild Wings Southwest Ranch sauce can be found at most grocery stores or it’s also on amazon! I usually find it at Walmart.

  • Peel, wash potatoes, and cut up into cubes.
  • Toss with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).
  • Cook potatoes in the air fryer at 400 degrees for about 20-25 minutes shaking them around at least a couple times while they cook.
  • Once potatoes are cooking, cut chicken into cubes.
  • Add 2 tbsp of butter to a skillet over medium high heat. Cook sliced onions and green peppers until they are tender.
  • Add the chicken to the skillet. Season chicken with salt, pepper, paprika, onion powder, cumin, and red pepper flakes.
  • Once the chicken is finished cooking add the minced garlic and about 1/4 – 1/2 cup of Southwest Ranch sauce.
  • Add cooked potatoes to the skillet and stir everything together. Top with shredded cheese.
  • Broil in the oven for just a few minutes to melt the cheese (you could also cover with a lid and let this sit on the stove until cheese melts). Top with a drizzle of the Southwest Ranch and enjoy!

Notes

If you don’t have an air fryer the potatoes can be baked in the oven at 400 degrees for 25-30 minutes or until they are cooked to your liking. It helps to stir the potatoes at least once about half way through cooking.
