If serving the sheet pan meal over rice, cook 2 cups of jasmine rice according to the directions on the package.
Cut chicken into cubes. Slice the kielbasa into rounds. Chop the onion, bell peppers, and pineapple into evenly cut pieces.
Spray a sheet pan with cooking spray and add the chicken, kielbasa, onion, and bell peppers to the sheet pan. Add 1-2 tbsp of olive oil and season with salt, pepper, paprika, garlic powder, and red pepper flakes. Stir everything around well until everything is well coated in seasonings.
Top the sheet pan meal with about 2 cups of fresh pineapple. Bake at 400 degrees F for 25 minutes.
Sometimes the chicken releases some liquid while cooking. You can pour off any extra liquid from the sheet pan meal then broil for a couple of minutes. Just watch it so it doesn't burn!
Top with your favorite sweet and sour sauce and chopped green onions. Serve over white rice or eat it as is. Enjoy!
