Sweet and Sour Sheet Pan Meal

This Sweet and Sour Sheet Pan Meal is easy to make and one my whole family loves! Sheet Pan meals are quickly becoming one of my favorite dinners for busy weeknight meals.

This recipe is made with chicken, kielbasa, green peppers, onions, pineapple and topped with sweet and sour sauce!

The best thing about Sheet Pan meals is that you can really use whatever protein or veggies you have on hand. I like serving this one over some jasmine rice, but that is optional!

Sweet and Sour Sheet Pan Meal

Ingredients

  • 1 lb chicken breasts
  • 12 oz kielbasa or smoked sausage
  • 2 green bell peppers
  • 1 onion
  • 2 cups fresh pineapple
  • 1/2 tsp each salt and pepper
  • 1 tsp each smoked paprika and garlic powder
  • 1/4 tsp red pepper flakes
  • Sweet & Sour sauce
  • Chopped green onions
  • Jasmine rice

Make Sweet and Sour Sheet Pan Meal

This recipe is easy to make and most of the work comes with chopping all of the ingredients. Start by chopping the onion, bell peppers, and pineapple into evenly cut pieces.

As long as the veggies aren’t chopped too small or too big everything will cook evenly. It’s important that the meat, veggies, and pineapple are all about the same size.

Next slice the kielbasa into thin rounds. Cut 1 lb of chicken breast into cubes.

If you are serving this Sweet and Sour Sheet Pan Meal over rice, cook 2 cups of Jasmine rice according to the directions on the package. I like using Jasmine rice, but you can use your favorite kind or even use the microwavable packs to keep this even easier!

Spray a sheet pan with cooking spray and add the chicken, kielbasa, onion, and bell peppers to the sheet pan.

Add 1-2 tbsp of olive oil and season with salt, pepper, paprika, garlic powder, and red pepper flakes. Stir everything around well until everything is well coated in seasonings.

Next, top the sheet pan meal with about 2 cups of fresh chopped pineapple.

Once the sheet pan meal is ready, this will bake at 400 degrees F for 25 minutes.

Once the chicken is fully cooked, I like to pour off any extra juice from the chicken cooking. Then broil the sheet pan meal at 500 degrees F for just a couple of minutes. Be sure to watch it so it doesn’t burn.

Serve Sheet Pan Meal

Once the chicken and veggies are cooked to your liking, top with your favorite sweet and sour sauce. Serve over white rice and top with some chopped green onions.

Tips and Frequently Asked Questions

  • Always cook chicken until it reaches an internal temperature of at least 165 degrees.
  • I used beef kielbasa for this recipe, but any variation of kielbasa or smoked sausage will work.
  • Be sure to cut everything about the same size, so everything cooks evenly.
  • Once the chicken is fully cooked, I like to turn the oven to broil and cook for a couple of minutes.
  • I used Panda Express Sweet and Sour sauce, but you can use any brand.
  • I served this sheet pan meal over some jasmine rice, but it is also good as is!

  • Sometimes the chicken releases some liquid while cooking. You can pour off any extra liquid from the sheet pan meal then broil for a couple of minutes. Just watch it so it doesn't burn!
  • Top with your favorite sweet and sour sauce and chopped green onions. Serve over white rice or eat it as is. Enjoy!
