Parmesan Garlic Chicken Mac and Cheese

This Crockpot Parmesan Garlic Chicken Mac and Cheese is an easy and delicious dinner recipe my family loves!
This combines all the flavors of Mac and cheese with Parmesan Garlic Chicken. Serve with some bread sticks and a veggie! Leftovers also reheat well.

Ingredients
- 1 lb chicken breast
- 1/2 tsp each of salt, pepper, paprika, garlic powder
- Buffalo Wild Wings Parmesan Garlic Sauce
- 8 oz of elbow macaroni noodles
- 2 cups of whole milk
- 2 1/2 cups Colby Jack cheese
- 8 oz cream cheese
- Parmesan cheese
- Parsley
Make Parmesan Garlic Chicken Mac and Cheese
To start making this recipe, spray a large crockpot with cooking spray.
Next, add 1 lb of chicken breast to your crockpot and season with salt, pepper, paprika, and garlic powder.
Add the Parmesan Garlic sauce. I like using Buffalo Wild Wing’s Parmesan Garlic sauce. Be sure not to add the whole bottle. I use just enough of the sauce to cover the chicken.
You can always add more sauce later if you want a stronger Parmesan Garlic flavor.
Cook on low for about 4 hours or until the chicken reaches 165 degrees. Shred or chop up chicken and add it back to the crockpot. I prefer to chop it up into small bite sized pieces.
Next, add a little bit more Parmesan Garlic Sauce to the chicken if desired. If you don’t like spice skip this step.
Boil macaroni in a pot of water on the stove for about 3 minutes and drain. This will not fully cook the pasta.
Cooking the macaroni for only a few minutes will ensure that the macaroni does not over cook or turn mushy in the crockpot.
In the crock pot combine the chicken with macaroni, milk, Colby Jack cheese, and cream cheese.
Stir everything together and cook on low for about an hour.
I prefer to stir this at least a few times during this hour. Stirring will help everything come together well.
Serve Parmesan Garlic Chicken Mac and Cheese
Once the cheese is melted, it’s time to eat! Top the Parmesan Garlic Chicken Mac and Cheese with Parmesan cheese and parsley. Enjoy!
I served this with some bread sticks and peas, but it’s also great with a salad or any of your favorite roasted veggies.
Tips and Frequently Asked Questions
- Always cook chicken until it reaches 165 degrees.
- I used the Buffalo Wild Wing’s Parmesan Garlic sauce, but you can use your favorite brand.
- I used freshly shredded Colby Jack cheese from a block for a creamier consistency.
- If you don’t have Colby Jack cheese, you could use shredded cheddar cheese or mozzarella cheese instead.
- Be sure to only boil the macaroni noodles for 3 minutes. This will not fully cook the macaroni and will ensure that the pasta does not over cook or turn mushy in the crockpot.
- You can shred or chop the chicken into cubes. I prefer to chop it into cubes.
- Leftovers of this recipe reheat well making it awesome to take for lunch the next day!
- Top the dish with some parsley and Parmesan cheese.
- If you aren’t a fan of Parmesan Garlic sauce, you can make this same recipe with your favorite buffalo sauce instead!
