Cheesy Beef Enchilada Skillet
This Cheesy Beef Enchilada Skillet is an easy and delicious dinner recipe that has all the flavors of Beef Enchiladas without the work of assembling enchiladas! It’s a one pan meal that can be made in about 30 minutes.

This recipe is made with pretty simple ingredients that you probably already keep stocked in your refrigerator and pantry.
It’s made with seasoned beef, enchilada sauce, corn tortillas, shredded cheese, and can be topped with your favorite enchilada toppings.

Ingredients
- 1 lb ground beef
- Salt, pepper, chili powder, cumin and dried cilantro
- Onion, chopped
- Minced garlic
- Small white corn tortillas, cut into squares
- 2 cans mild enchilada sauce
- Chihuahua cheese
- Shredded Colby Jack cheese
- Sour cream
- Cilantro

Make Cheesy Beef Enchilada Skillet
There isn’t a lot of prep work with this recipe. Start by chopping one onion and measuring out your seasonings.
I like using a homemade blend for Taco seasoning, but you could use a taco seasoning packet if you prefer!
Start by browning 1 lb of ground beef in a large oven safe skillet over medium-high heat.
Next, season the beef with salt, pepper, chili powder, cumin and dried cilantro.

Add the chopped onion to the skillet.
Let that cook until the ground beef is cooked through and onions have softened.
While the beef is browning, cut up 10 small white corn tortillas into squares.

Once the ground beef is fully cooked drain any grease from the skillet.
Next, add the minced garlic and the cut up white corn tortillas to your skillet.
Stir those around with the ground beef and add two cans of mild enchilada sauce.

Add a handful of Chihuahua cheese and stir everything together well.
Top the whole skillet with some shredded Colby Jack cheese.
Place the skillet in the oven at 400 degrees F for a few minutes or until the cheese is melted.
