This meal is great for a busy weeknight or if you are looking for something quick, cozy, and filling.
This chicken and rice meal is made with simple ingredients you probably already have in your refrigerator and pantry. It’s made with chicken breast, ranch seasoning, bacon, cheese, chicken broth, rice, and cream cheese.

Ingredients
- Chicken breast, cut into cubes
- Butter
- Onion, chopped
- Salt, pepper, smoked paprika, ranch seasoning
- Minced garlic
- Chicken broth
- White jasmine rice, rinsed
- Colby Jack cheese, shredded
- Cream cheese
- Bacon, cooked and crumbled
- Green onions, chopped

Make One Pan Crack Chicken and Rice Skillet
To start making this super easy recipe, prep just a couple of your ingredients!
Cut 1 lb of chicken breasts into small pieces or cubes.
Next, measure out your seasonings and gather all of your ingredients.
Add butter to a skillet over medium-high heat. Add the chicken and spread out evenly in pan. Season with salt, pepper, paprika, and ranch seasoning.

Once the chicken is almost cooked through add the chopped onions and minced garlic. Stir and let cook for just a few minutes.
Next, create a well and add the rinsed rice to the center of the skillet.
Stir and let the rice toast for just a couple of minutes.

Add the chicken broth to the skillet. Bring to a boil, reduce heat to medium-low, and cover with a lid.
Let cook covered for about 15-20 minutes or until rice is cooked.
Once the rice is fully cooked, add about a cup of shredded cheese and stir.
Top with more cheese, crumbled bacon, and cover with the lid.

Let the skillet sit on the stove covered to melt the cheese or pop it in the oven under the broiler for just a few minutes.
Serve Crack Chicken and Rice
Once the cheese is nice and melted, it’s time to eat. Top with chopped green onions. I served this with an easy salad kit, but any veggie would make a great side.

Be sure to save any leftovers you may have in a sealed container in the refrigerator. The leftovers reheat well for lunch the next day.

Instructions
- Cut the chicken into small pieces.
- Add butter to a skillet over medium-high heat. Add the chicken and spread out evenly in pan. Season with salt, pepper, paprika, and ranch seasoning.
- Once chicken is almost cooked through add chopped onions and minced garlic. Make a well in the center of the skillet and add the rice. Stir the rice around for a minute or two to let it toast.
- Next, add the chicken broth and stir everything together well. Bring the whole skillet to a boil, reduce heat to medium-low, and cover with a lid.
- Let cook covered for about 15-20 minutes or until rice is cooked. Add about a cup of shredded cheese and stir. Top with more cheese, crumbled bacon and cover with the lid to let the cheese melt or pop it in the oven under the broiler for just a few minutes.
