Let’s Talk Meatballs

Before getting into the full recipe, let’s talk meatballs!

Frozen meatballs are essential to many of my family’s favorite recipes, but my wife and kids are not a fan of any store bought meatballs that we’ve tried.

You’re of course welcome to use your favorite brand of frozen meatballs, but the frozen ones used in this recipe are homemade.

Trays of Meatballs

Meatballs are really simple to make at home and freeze for easy dinners like this one. Every couple of months we do a family meatball day using my wife’s homemade meatball recipe.

It’s just a combination of simple ingredients like ground beef, breakfast sausage, bread crumbs, egg, and seasonings folded together, rolled into balls, and baked to perfection. Check out my full homemade meatball recipe here.

The kids have a lot of fun with this and it’s minimal work with a maximum payout that we’re grateful for every time we pull a pack from the freezer!

Next, add 2 (24 oz) jars of marinara sauce, garlic powder, onion powder, Italian seasoning, and red pepper flakes to a crockpot.

Meatballs, marinara sauce, seasonings in slowcooker

Stir the seasonings, sauce, and meatballs and cook on low for 4-6 hours.

After about 4-6 hours, boil water for the lasagna noodles. Breakup and cook 16 oz of lasagna noodles following the directions on the box.

If you don’t have lasagna noodles, you could really use any pasta you already have in your pantry.

Add the cooked pasta, 15 oz of ricotta cheese, and about 1 cup of shredded mozzarella cheese to the crockpot.

Stir well everything together well.

Top with a little bit more shredded mozzarella cheese.

Once you add the cheese on top, cover with the lid, and let it keep cooking until the cheese is melted.

I let mine keep cooking for 15-20 minutes, but you really just want the cheese to melt.

Serve Easy Crockpot Meatball Lasagna

Once the cheese is melted, it’s time to eat! Top the Meatball Lasagna with dried parsley and Parmesan cheese.

I like serving this crockpot pasta with a Caesar salad and some frozen bread sticks.

Plated Crockpot Meatball Lasagna

You really can’t go wrong with pasta, garlic bread, and a salad! This is a two night dinner for my family.

Store any leftovers in a container in the refrigerator. The leftovers reheat well, just like lasagna, for dinner for the next night!

You will love this recipe because it’s easy, hearty comfort food, and makes a lot of food! My kids love anything lasagna, so this one always goes over well with my family.
