Parmesan Garlic Chicken with Tortellini and Veggies is an easy and delicious griddle recipe for Summer!

This dish is bursting with flavor, packed with hearty ingredients, and comes together easily on a griddle or inside on the stove!

Parmesan Garlic Chicken with Tortellini  and Veggies

Ingredients

  • Chicken breast
  • Buffalo Wild Wings Parmesan Garlic
  • Italian style breadcrumbs
  • Parmesan cheese
  • Zucchini, chopped
  • Red onion, sliced
  • Cherry tomatoes
  • Pepperoncinis, chopped
  • Salt, pepper, garlic powder
  • Frozen cheese tortellini
  • Italian dressing
  • Parmesan cheese
  • Dried parsley

Prep the Ingredients for Chicken and Veggies

This recipe does require some prep work before cooking. Start by chopping all of the veggies. I like to use zucchini, red onion, and Cherry tomatoes, but you can really use any vegetables you have on hand!

Chop 2 zucchini into bite size pieces. Next, slice a red onion into long slices. Measure out about 1 heaping cup of cherry tomatoes and add all of the veggies to a bowl.

Next, add some chopped pepperoncinis to the bowl. You can add as many or as little of these as you like!

These did make the tortellini and veggies spicy, so keep that in mind! Omit them if you don’t want spice, or make sure to use mild to cut down on the heat. You could also simply top the finished dish with just a few to cut down on the spice as well.

The final step in prepping the ingredients is cutting the chicken! Cut the chicken breasts in half lengthwise to make them thinner. Pat the chicken breasts with paper towels to remove any extra liquid.

Make Tortellini and Veggies

For the veggies and tortellini, I like to start cooking the vegetables first, because they take a little while to cook.

Add all of the veggies to the griddle and season with a little bit of salt, pepper, and garlic powder. I also like to add a little bit of oil to the veggies to help them cook.

Stir and cook until the vegetables are tender or cooked how you like them.

Next, add the bag of frozen cheese tortellini with a little bit of water. Cover with a large griddle dome for a few minutes, or until the tortellini are tender.

Once the tortellini and veggies are cooked, pour some Italian dressing over them and stir well. Top with Parmesan cheese.

Make Parmesan Garlic Chicken on the Griddle

To start making the crispy Parmesan Garlic Chicken, add the chicken breasts to a bowl and cover the chicken in Buffalo Wild Wings Parmesan Garlic Sauce.

You need to use enough of the sauce to coat the chicken. Stir until the chicken is well coated in sauce.

I don’t add any extra seasoning to the chicken because I feel like there is plenty of flavor in the sauce and Italian breadcrumbs, but you could lightly season the chicken if you want to!

Next, in a separate bowl or container combine the breadcrumbs and parmesan cheese.

Dredge the chicken in the breadcrumb mixture making sure both sides are well breaded.

Heat a griddle over medium heat. Add some oil to the griddle and carefully lay the breaded chicken in the oil.

Cook until golden brown and flip to cook the other side of the breaded chicken. Be sure to carefully flip the chicken so the breading doesn’t get messed up.

Cook the crispy chicken until both sides are golden brown and the chicken reaches an internal temperature of at least 165 degrees F.

Once the chicken is fully cooked, you can lay the chicken out on paper towels to drain any extra grease.

Once everything is ready, it’s time to eat! I like to top the chicken with some Parmesan cheese and dried parsley! Enjoy!

This dish is great on its own, but you could also pair it with some garlic bread and a salad if you need more sides.

No Griddle? No Problem!

If you don’t have an outdoor griddle, or don’t want to cook outside you can easily make this recipe inside on your stove using at least a couple of skillets!

I would start the veggies in one large skillet and fry the chicken in a separate large skillet.

For the tortellini, I would simply boil it on the stove in a pot following the directions on the package.

Once the tortellini and veggies are cooked, combine them in the skillet you used to cook the vegetables.

  • I used Buffalo Wild Wings Parmesan Garlic Sauce, but you can use your favorite brand or use mayo instead.
  • I like to use Italian style breadcrumbs for this recipe.
  • This is one of those recipes that you can really use any vegetables you have on hand, but I used zucchini, red onion, and Cherry tomatoes.
  • The chopped pepperoncinis give the veggies and tortellini some heat! If you don’t want it spicy, use mild banana peppers instead or skip them all together!
  • Cutting the chicken in half lengthwise and patting the chicken dry with paper towels will help result in crispier chicken!

Notes
