Crockpot Crack Chicken Sandwiches are about the easiest slow cooker recipe that you could ask for. This is a dinner that kept my wife and I fed all throughout college and now it’s one that both my picky kids love. This is a simple recipe that doesn’t take a lot of ingredients or prep work to make and the leftovers can be turned into all kinds of things.

Ingredients
- 1 lb chicken breast
- 1/2 tsp each of salt and pepper
- 1 tsp paprika
- 2 TBSP of ranch seasoning
- 1 onion
- 1 tbsp minced garlic
- 1/2 cup of chicken broth
- 8 slices of bacon
- 1 block of cream cheese
- 1 cup of shredded cheddar cheese
Prepping the Crockpot Crack Chicken Sandwiches
This recipe takes almost no prep work and that’s one of the reasons I love it for an easy dinner. To make it just chop up an onion and gather the seasonings listed above.
Then you’re just going to trim any excess fat and unidentifiable pieces off of your chicken breast and grab your slow cooker.
Making the Crockpot Crack Chicken Sandwiches
Place one pound of chicken breast into the bottom of the crockpot along with a diced onion. Next, add in salt, pepper, paprika, and ranch seasoning along with a tablespoon of minced garlic.
To finish up just pour in half a cup of chicken broth, throw on the lid and let it cook on low for 4-6 hours.
Once the chicken is cooked through you will be able to shred it up with a hand mixer or a couple of forks. Add in an 8 ounce block of cream cheese and a cup of shredded cheddar.
Then place the lid back on for about 30 more minutes for that cheese to melt.
Serving the Crockpot Crack Chicken Sandwiches
Once the cheese has melted just mix everything together and dinner is ready to serve. We like to have these with slices of crispy bacon on top, but you can also crumble the bacon and stir it into the mixture if you’d prefer.
Serve with fries, tater tots, a salad, or some roasted broccoli!

- This recipe can be made in the Crockpot cooking on low for about 4 to 6 hours. You just want to make sure the chicken comes to a temp of 165 degrees.
- I like to top the sandwiches with bacon to keep it crispy, but you can also stir in crumbled bacon if you prefer.
- I like to shred my own cheddar cheese for a better texture, but pre-shredded cheese will work as well.
- My family enjoys these as sandwiches, but the chicken is also great for quesadillas or stuffed into a baked potato.

- Cook bacon while cream cheese is melting. Once bacon is cooked build sandwiches and top with the crispy bacon.
- Enjoy!
Can you substitute the cream cheese with something else, or leave it out? I’m not a fan of cream cheese.
You could probably just use a little bit more shredded cheddar cheese and skip the cream cheese!

You don’t have to follow the recipe exactly; add what you like for seasonings and use Hawaiian bread for an elevated flavor. (I add Cajun seasoning, it’s bomb.) and be kind.

While the chicken itself was amazing and will definitely be added to our rotation, we found it to be a little messy fit sandwiches and served it over baked potatoes instead.

I love this recipe! I bulk it up and add a bit more nutrition by adding in mushrooms for the last half hour or forty five minutes and putting spinach in at the end. I love to serve it in tortillas that are then toasted on the stove or cold. Delicious!
I have made several recipes now from this site and this is an absolute favorite for my family. It’s easy to prep and just as easy to clean up! If you’re worried about fat content you can use low fat cream cheese and turkey bacon and it tastes just as good!
