Crockpot Chicken and Gnocchi

This Crockpot Chicken and Gnocchi recipe is perfect for fall! This meal has everything you love from a good bowl of chicken and dumplings and it’s really easy to make. My family loves chicken and dumplings, but this time of year can be hectic and there isn’t a bunch of extra time for complex dinners. This Crockpot Chicken and Gnocchi is the perfect answer for our family because it’s made from simple ingredients and you can just dump it all in the Crockpot!

Ingredients

  • 1 lb of chicken breasts
  • 1/2 tsp pepper
  • 1 tsp each of onion powder, garlic powder, and parsley flakes
  • 1 onion chopped
  • 4 sticks of celery chopped
  • 4 carrots chopped
  • 1 10 oz can of cream of chicken soup
  • 1 10 oz can of cream of celery soup
  • 2 cups of chicken broth
  • 16 oz package shelf stable gnocchi
  • Seasoning salt

Prepping the Crockpot Chicken and Gnocchi

Grab a cutting board and wash 4 sticks of celery along with 4 large carrots. Chop those into bite sized pieces and set them aside. Next, you’re going to peel an onion and get that diced up.

Measure out one teaspoon each of onion powder, garlic powder, and dried parsley. Add the seasonings to a small bowl along with half a teaspoon of black pepper.

Then you’re just going to trim one pound of boneless skinless chicken breast. This may not be necessary if there isn’t any extra fat on the chicken breast you are using.

Cooking the Crockpot Chicken and Gnocchi

This is the easy part! The beauty of this meal is once everything is prepped you are really just dumping everything in a Crockpot.

Once you’ve gotten your Crockpot out of the cabinet you’ll just add in your chicken breasts. Then just sprinkle the seasoning blend from above over the chicken and pour on the chopped veggies.

Next, you will add in one 10 ounce can each of cream of chicken and cream of celery. To finish it off pour in 2 cups of chicken broth and stir everything together.

Then just add the lid to your Crockpot and let this cook on high for 4 hours or low for 6 hours.

Once your timer has gone off for the Crockpot make sure the veggies are tender and the chicken has come to a temp. of at least 165 degrees. Then just pull out the chicken and cube it up into bite sized pieces or shred with a couple of forks.

Then just add the chicken back to the crockpot along with 1 pound of shelf stable gnocchi and stir everything together. Let that cook on high for another 30 minutes so the gnocchi can soften.

Serving the Crockpot Chicken and Gnocchi

After 20-30 minutes the gnocchi will become tender and dinner will be ready to serve. I like to do a taste test here and add in a little seasoning salt as needed.

I like to serve this dinner with some fresh dinner rolls, well fresh out of the freezer! ha ha Each bowl also gets a sprinkling of dried parsley to make it look fancy and it’s time to eat!

Tips and Frequently Asked Questions

  • Always cook chicken until it reaches an internal temperature of 165 degrees!
  • The chicken and veggies were tender and cooked in my crockpot on low at 6 hours, but all Crockpots cook a little differently.
  • There is plenty of sodium in the canned soup mixes so go easy on the extra salt until tasting at the end.
  • I used 1 can each of cream of chicken and cream of celery, but you could use 2 of either based on what you have.
  • I use the vacuum sealed shelf stable gnocchi from the pasta section at Walmart for this recipe.

Instructions

  • Add chicken to a slow cooker and season with pepper, onion powder, garlic powder, and parsley flakes.
  • Add onion, celery, carrots, cream of chicken soup, cream of celery soup, and chicken broth.
  • Cook on high for 4 hours or low for 6 hours. Once chicken is cooked shred or cube it up and add it back to the crockpot. Add the package of gnocchi.
  • Turn the crockpot to high and let cook for about 30 minutes. I like to taste it once it’s cooked and add a little bit of seasoning salt if needed at the end. Once gnocchi is tender serve!

    Made this into a pressure cooker meal. My kids loved the taste without the “dumplings” per say . My child that was hooked on Cracker Barrel dumplings loved the twist..thank you

    DELICIOUS. Made this tonight but adjusted a bit because I didn’t plan enough time for the crockpot. Used a rotisserie chicken. Sautéd the veggies a bit and added the soup, liquid and cut up chicken along with some poultry seasoning and pepper. Cooked high pressure in instapot for 10 minutes, natural release for 10 minutes. Added the gnocchi and turned instapot to slow cook for 30 minutes.

    The taste is delicious, it doesn’t taste like the canned soups. I used chicken tenderloin as it’s what I had defrosted so I cooked for less time and still came out perfect. I will say the gnocchi isn’t a hit. It’s cooked through just not very good with the mix. I’d recommend skipping the gnocchi and using this to fill a pot pie shell!

    Never had gnocchi until making this meal and now I wanna make all of Luke’s recipes that call for gnocchi! This kind of reminded me of chicken and dumplings but so much easier. Just dump and go….loved it! It will go on our weekly rotation especially when it’s cold outside!
