Pizza Impossible Pie

This pizza pie is an easy family-friendly dinner that can help break up the normal dinner routine. My family loves these Impossible Pies and having pizza in the name makes any dinner kid approved at my house! This Impossible Pizza Pie is something the whole family will love.  If your family is like mine, it can be hard to find a recipe that is quick and easy and the whole family will love…without the guilt of just throwing chicken nuggets, or pizza rolls in an air fryer and calling it done (let us be honest…we have all been there and have done that).  Every working parent knows that weeknight dinners just don’t get the attention and preparation that other meals get.  This recipe is a kid-friendly meal that is guaranteed to satisfy everyone, without much preparation.  

If you have small kids in the house (and let us face it…grown-ups too), and the name, shape, appearance, smell, taste, or texture of pizza is present;  the recipe is going to be a unanimous winner and asked to be placed on the dinner rotation.  This recipe covers all those bases.  I am pretty sure these were called impossible pies on the back of the Bisquick boxes in the ‘80s and ’90s, and they sure do bring back some nostalgia for me. 

Let us start by talking about the ingredients that we need.  As far as proteins go, you will need one pound of ground beef, this is the base of the recipe and will provide a bulk of its deliciousness.  I always keep an eye out for ground beef when it is on sale or buy it in bulk and store it in my deep freezer so it is always on hand when I need it for a quick meal.  If you or your kids are like mine…anything with pepperoni in it will instantly be delicious.   You will need at least one-quarter of a cup of chopped pepperoni for the base of the pie and however much you want to place on the top (just so the kids can see it and decide that this is the best meal they have ever had..ha).    

This recipe is just like the pizzas that you love, it is open to whatever your tastes are.  You can add whatever vegetables you like on your pizza, to this recipe, but one that I am sure you will want to add is onion.  I always keep a bag of onions on hand and keep them stored away in a cool, dark, and dry place and they will always be ready to jump in when you need a blast of flavor or texture to your recipe.  

As far as spices go…most of my recipes require the basics that are easy to keep stocked.  There is nothing worse than starting a meal and then going to the spice cabinet only to find that you are missing one single, yet very necessary, spice.  The spices you need for this recipe are salt, pepper, paprika, Italian seasoning, onion powder, and crushed red pepper flakes.  It goes without saying, but if you want more spice…add spice to your heart’s content.  If you want to make it milder (for those younger palates in your house), adjust as needed.  You also want some minced garlic to add the yummy Italian flavor that you associate with pizza and breadsticks.  

Other ingredients you need for this recipe are as follows:  Marinara sauce, Bisquick, eggs, milk and mozzarella cheese.  These ingredients are items I almost always have in my house.  They are easy and basic items that can be checked really quickly before a weekly or monthly grocery run.  

The instructions on this recipe couldn’t be any easier.  Start by browning the ground beef with a diced onion in a skillet.  Add all the seasonings:  salt, pepper, paprika, Italian seasoning, onion powder, red pepper flakes, and minced garlic.  After the ground beef is browned, add the chopped pepperoni and cook for a few minutes to heat through.  Add the marinara sauce and minced garlic.  Drain off the excess grease and take the skillet off the heat while you prepare the next steps.

In a bowl whisk together the Bisquick, milk, and two eggs.  Take a pie pan and grease it with cooking spray.  Place half of the ground beef mixture on the bottom.  Add one cup of mozzarella cheese on top.  Layer the other half of the ground beef and the other cup of cheese on top.

This is where the “IMPOSSIBLE PIE” magic happens.  Simply pour the Bisquick mixture over the top of the layers and top with the remainder of the pepperonis or whatever pizza toppings you want.    

Bake at 400 degrees for 25 minutes.  Take the pie out of the oven and let it rest for a few minutes to firm up.  Serve and enjoy!

Ingredients

  • 1 lb ground beef
  • 1 diced onion
  • 1/2 tsp each of salt and pepper
  • 1 tsp each of paprika Italian seasoning, and onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1 TBSP minced garlic
  • 1 cup Marinara sauce
  • 1/4 cup of chopped Pepperoni + more for topping
  • 1/2 cup Bisquick
  • 2 eggs
  • 3/4 cup milk
  • 2 cups shredded mozzarella cheese

Instructions

  • brown the ground beef with a diced onion in a skillet
  • add in all the seasonings listed above
  • once ground beef is browned add pepperoni -let pepperoni cook for a few minutes
  • drain off any extra grease from the meat
  • add 1 cup of marinara and minced garlic
  • stir well and take the skillet off the heat
  • in a bowl whisk together the Bisquick, milk, and two eggs
  • spray a pie pan with cooking spray
  • layer half of the ground beef in the pie pan and top with 1 cup of cheese
  • add the rest of the ground beef and top with 1 more cup of cheese
  • pour the Bisquick mixture over the top of the ground beef and cheese
  • top with pepperoni
  • bake at 400 degrees for 25 minutes
