Beef and Potato Tacos

 

 

Beef and potato tacos are easy and delicious! These are a great dinner recipe for Taco Tuesday! I like to top them with homemade Pico de Gallo, sour cream, and taco sauce.

 

 

Ingredients

  • 4-5 small/medium potatoes

  • olive oil + salt, pepper, garlic powder, and paprika

  • 1 lb ground beef

  • 1 chopped onion

  • 1/2 tsp salt and pepper

  • 2 tsp chili powder

  • 1 tsp each of cumin and dried cilantro

  • 1 TBSP minced garlic

  • Shredded Monterey Jack cheese

  • White corn tortillas

  • 2 TBSP olive oil

  • 2 TBSP butter

How To Make

To make these Beef and Potato Tacos, start by peeling, chopping, and washing 4-5 small/medium sized potatoes and adding them to a bowl. Season with olive oil, salt, pepper, garlic powder, and paprika. I don’t use exact measurements for this part.

Add potatoes to an air fryer and cook at 400 degrees for about 20-25 minutes. I like to shake them around at least a couple of times while the potatoes are cooking.

In a skillet, brown ground beef with a chopped onion over medium high heat. Drain any grease from the skillet and add the taco seasoning. I like to use salt, pepper, chili powder, cumin, and dried cilantro. You could also use your favorite taco seasoning packet instead!

Once potatoes are finished cooking add them to the skillet of ground beef. In a sparate pan, heat olive oil and butter over medium high heat.

 

 

Add tortillas to the pan, top with shredded Monterey Jack cheese, and top with the ground beef and potato mixture. Fold the tortilla over and cook until both sides are golden brown and crunchy. I like to flip them a few times back and forth until I am happy with how they are cooked.

Once all beef and potato tacos have been made it’s time to eat! I love these with homemade Pico de Gallo (I have included that recipe down below on the recipe card for you), sour cream, and taco sauce. You can top them with any of your favorite taco toppings though!

  • I like using white corn tortillas, but you can use your favorite type of tortilla.

  • I used shredded Monterey Jack Cheese, but any cheese would be good in this!

  • 1/2 onion diced
  • 1 jalapeño diced
  • 1/2 a bunch of cilantro
  • 2 limes squeezed
  • Salt and pepper

Instructions

  • Peel, wash potatoes, and cut up into cubes.
  • Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).
  • Cook potatoes in the air fryer at 400 degrees for about 20 minutes shaking them around at least a couple times while they cook.
  • Once potatoes are cooking, brown ground beef in a skillet over medium high heat.
  • Add a chopped onion. Once beef is cooked drain any extra grease and add the salt, pepper, chili powder, cumin, and dried cilantro.
  • Add the minced garlic to the ground beef.
  • Lower the heat to a simmer.
  • Add cooked potatoes to the skillet of ground beef.
  • In a separate pan, heat olive oil and butter over medium high heat.
  • Add a corn tortilla to the skillet, top with shredded cheese, and the ground beef/potato mixture.
  • Fold the tortilla over and cook on both sides until golden brown and crunchy.
  • Serve topped with pico, sour cream, and taco sauce!
