Ingredients
- Ground beef
- Onion
- Salt, pepper, ground cumin, onion powder, paprika, chili powder
- Minced garlic
- Hotdogs
- Rotel, drained
- Chili beans
- Tomato paste
- Colby Jack cheese
- Crispy crowns or tater tots
- Green onions
- Mustard
Make Chili Cheese Dog Tater Tot Casserole
To start making this super easy casserole, prep just a few of your ingredients. There really isn’t much prep work involved in this recipe. Start by chopping one onion and chopping a couple of green onions.
Next, chop 4 hot dogs into rounds and set aside.
Heat a large skillet over medium-high heat and brown 1 lb of ground beef with chopped onion.
I like making this recipe in my large 12 inch cast iron skillet, but if you don’t have an oven safe skillet you can always transfer the ingredients to a baking dish before assembling the casserole and baking it.
Season with salt, pepper, cumin, paprika, chili powder, and onion powder. Once the beef is fully cooked, drain any extra grease from the skillet.
Add 1 tbsp of minced garlic and the cut up hot dogs. Stir everything together well.
I only used four hot dogs, but if you want more hot dogs you could definitely just use the whole package!
Next, add the can of drained Mild Rotel (diced tomatoes and green chiles), chili beans (not drained), and 3 tbsp of tomato paste.
Stir everything together well and let simmer on the stove for a few minutes. Letting it simmer for just a few minutes will help the chili mixture thicken just a little bit!
Now it’s time to assemble the casserole! If you don’t have an oven safe skillet you can transfer this to a 9 x 13 baking dish now.
Top the chili dog mixture with 1 cup of shredded Colby Jack cheese and the crispy crowns.
Do your best to get the crispy crowns in a nice even layer, so they cook evenly. If you have tater tots you can also use those in this recipe. I prefer the crispy crowns because I feel like they get crispier!
You won’t quite use all of the crispy crowns in this recipe. I usually save the rest for breakfast burritos!
Bake in the oven at 400 degrees F for about 25 minutes. If you want the crispy crowns extra crispy you can broil the casserole for a few minutes!
Serve Chili Cheese Dog Tater Tot Casserole
Once the cheese is melted and the crispy crowns are browned, it’s time to eat! Top the tater tot casserole with some chopped green onions.
I served this with some mustard for the ultimate chili cheese dog flavor! We had this with a simple salad, but it would also be good with any veggie your family likes.
You will love this recipe because it can be made all in one pan, won’t mess up the whole kitchen, and it is picky kid approved!
