Ingredients
- Ground beef, browned
- Baby potatoes, quartered
- Taco seasoning
- Diced tomatoes with green chiles, drained
- Condensed cheddar soup
- Colby Jack cheese
- Minced garlic
- Cilantro (dried or fresh)

Make Crockpot Taco Potatoes
To make this recipe, start by browning one pound of ground beef in a skillet over medium-high heat. Once the beef is fully cooked drain any grease well and set aside.
While the beef is browning, slice a bag of baby potatoes into quarters.
Spray your crockpot with cooking spray.


Next, add the potatoes to the crockpot. Pour the ground beef, taco seasoning, and minced garlic into your slowcooker.
Add the drained diced tomatoes with green chilies with the can of cheddar soup.
Stir everything together well.
Cook on low for 6-8 hours.


When you are ready to eat stir in 1 cup of shredded cheese and top it with a little bit more.
Top with cilantro. Let it sit until the cheese is melted.
