Smothered Chicken Sandwiches
Smothered Chicken Sandwiches are so good and pretty easy to make! I made these inside on the stove, but this also makes a great griddle recipe! This smothered chicken recipe is good as is or served on buns to make sandwiches.
Ingredients
- 1/4 tsp salt
- 1/2 tsp pepper
- 1 tsp each of onion powder and smoked paprika
- 1 pound of chicken breast
- 1/2 cup low sodium soy sauce
- 1 TBSP lemon juice
- 1 TBSP Worcestershire sauce
- 1 TBSP Olive oil
- 1 1/2 TBSP minced garlic
- 4 TBSP of butter (To cook mushrooms, onions, and chicken in)
- 1 onion sliced (Seasoned to taste with SPG)
- 1 8 oz container of mushroom sliced
- Sliced Swiss
- 4 buns + mayo
Prep the Smothered Chicken
The first step in making smothered chicken is starting with one pound of chicken breast. I like to slice the chicken breasts in half lengthwise to make them thinner.
Next, season the chicken with some salt, pepper, paprika, and onion powder. Place the chicken is a container and make the marinade for the chicken.
To make the marinade combine low sodium soy sauce, lemon juice, Worcestershire sauce, olive oil, and minced garlic. Stir the marinade together well and pour this over the chicken. Place a lid on the container and put the chicken in the refrigerator for at least 1 hour.
I also like to go ahead and prep the mushrooms and onions for this recipe. Wash, dry, and slice a container of mushrooms. Next, slice an onion into thin slices and put in a container with the mushrooms. Place the veggies in the refrigerator while the chicken marinates.
Make Smothered Chicken Sandwiches
To start making the smothered chicken sandwiches, start by spreading mayo or butter on 4 buns. I like to toast these in a skillet over medium heat until golden brown. Once the buns are toasted set them aside.
In the hot skillet, melt 2 tbsp of butter and add the sliced mushrooms and onions to the skillet. Season the veggies with some salt, pepper, and garlic powder.
Let the mushrooms and onions cook until they are cooked down and starting to brown. Once they are cooked to your liking remove them from the pan and set aside.
Next, add 2 more tbsp of butter to the hot skillet. Once the butter is melted, add the marinated chicken to the skillet. Be sure not to dump all of the marinade in with the chicken. I like to shake each piece of chicken gently over the container of marinade before adding it to the skillet.
Sear the chicken on each side and cook until golden brown and finished cooking.
Top the chicken with the cooked mushrooms and onions. Place a slice of Swiss cheese on top of each piece of chicken.
This will go back in the oven at 400 degrees for just a couple of minutes or until the cheese is melted. The chicken should reach at least 165 degrees with an internal meat thermometer.
Serve Smothered Chicken Sandwiches
Once the smothered chicken is cooked it’s time to build the sandwiches! Add a piece of the smothered chicken to a toasted bun. We kept these simple and dipped them in some A1 Steak Sauce, but you can add whatever other toppings or sauce you like!
I served the smothered chicken sandwiches with some boxed pasta salad and some roasted broccoli. Fries, green beans, or salad would also be good sides to make with this dinner.

Tips and Frequently Asked Questions
- Always cook chicken until it reaches a temperature of at least 165 degrees with an internal meat thermometer.
- I topped the chicken with slices of Swiss cheese, but sliced mozzarella or Monterey Jack cheese is also good.
- Let the chicken sit in the marinade in the refrigerator for at least one hour at the minimum.
- This smothered chicken is good on sandwiches, but you can also just eat it as smothered chicken.

Instructions
- Season your chicken on both sides with salt, pepper, onion powder and smoked paprika.
- Mix together your marinade and pour it over the chicken. That goes into the fridge for a couple hours, or until you lose patience.
- Get your skillet over medium heat and add in a tablespoon of butter to cook your sliced onion and mushrooms in. Season the onions and mushrooms with salt, pepper, and garlic powder. Let that cook until they are cooked down. Remove them from the pan and set aside.
- Melt the remaining two tablespoons of butter and cook your chicken until golden brown and to an internal temp of 165 degrees.
- Top the cooked chicken with your mushrooms, onions, and a slice of Swiss cheese.
- Place the skillet over smothered chicken in the oven at 400 degrees just until the cheese is melted.
- Eat smothered chicken as is or put on toasted buns to make sandwiches! Enjoy!
