Garlic Bread BBQ Chicken
This Garlic Bread BBQ Chicken is an easy weeknight dinner recipe that my family loves. Most of the actual cooking for this one takes place in the Crockpot so it’s perfect for a busy night. The slow cooker BBQ chicken can also be used for a ton of different meals so the leftovers never go to waste.
Ingredients
- 2-4 chicken breasts
- 1 tsp each of salt, pepper, paprika
- 1 TBSP ranch dressing seasoning
- 1 TBSP minced garlic
- 1 TBSP vinegar
- BBQ Sauce (I usually use Sweet Baby Ray’s)
- 8 count box garlic bread toast
- Mozzarella cheese slices
Making the Slow Cooker BBQ Chicken
Place your chicken breasts into the bottom of a slow cooker and season with salt, pepper, paprika and ranch seasoning. Next, you will add in one tablespoon each of minced garlic and white vinegar.
Then you will cover each chicken breast with your favorite BBQ sauce. I never use exact measurements for this part, but you just need enough to cover the chicken. You can always add more sauce later after the chicken is cooked and shredded.
Add the lid to your slow cooker and let this cook on high for 3-4 hours, or until the chicken reaches a temperature of at least 165 degrees.
Making the Garlic Bread BBQ Chicken
Preheat your oven and bake your garlic bread according to the directions on the box. Once your BBQ chicken has finished cooking it should be easy to shred with a couple of forks.
I like to use a hand mixer for this part to speed things up. If you are using a mixer just make sure to pulse slowly on low speed at first to avoid splattering. My hand mixer is a Kitchen Aid cordless mixer I got from amazon. Check it out here! This is my amazon affiliate/commission-able link.

This is the point where you’ll want to taste the chicken and add more BBQ sauce if desired. Remove your cooked garlic bread from the oven and press a spoon into the center of each one to form a little bowl.
Place a piece of mozzarella cheese into the bottom of each piece of garlic bread and top that with a scoop of BBQ chicken.
To finish these off add another slice of mozzarella over the top if desired and place them back in the oven for just a couple minutes to melt the cheese!
Serving the Garlic Bread BBQ Chicken
Once the Garlic Bread BBQ Chicken comes out of the oven they are ready to serve immediately. I like to sprinkle on a little dried parsley to make them look fancy and serve with mixed veggies and Mac and Cheese. You could also keep it simple and serve it with a side salad. The leftover chicken is perfect for stuffing baked potatoes, making sandwiches, or even quesadillas.

Instructions
- Spray a crockpot with cooking spray.
- Add chicken, minced garlic, vinegar, and all the seasonings to a crockpot.
- Add some BBQ sauce on top. I don’t use exact measurements for this part. I usually just do enough to cover the chicken, but you can really use as much as you’d like.
- Cook on high for 4 hours or low for 6 hours.
- Shred the chicken, stir well, and add a little bit more BBQ sauce if needed.
- Bake garlic bread according to the directions on the box.
- Layer half a slice of mozzarella cheese, a spoonful of the bbq chicken, and the other half of the mozzarella cheese.
- Put back in the oven just to melt the cheese.

I saw this recipe on Facebook and it looked quite yummy. I already had garlic bread slices in the freezer and some shredded rotisserie chicken. This was so quick and easy to put together. I used Swiss cheese on mine with a side of potato salad. Delicious!
