Make Pork Tenderloin Sheet Pan Dinner
To start making this delicious garlic butter pork tenderloin and veggies, start by prepping just a couple of your ingredients.
Slice one bag baby potatoes in quarters, slice 1/2 a bag of baby carrots in half, and chop an onion.

Add the vegetables to a sheet pan with 1 tbsp olive oil.
Season the veggies with salt, pepper, smoked paprika, Italian seasoning, and garlic powder. Stir veggies until well coated in oil and seasonings. It’s important to not overcrowd your pan this will help the vegetables roast.
This seasoning blend works well with Garlic and Herb pork and garlic butter sauce, but you can switch up the seasonings as you see fit!
Move the veggies from the center of the sheet pan and add the Garlic and Herb pork tenderloin to the pan. Add a little drizzle of olive oil to the top of the pork to help with browning.

I’ve found that moving the vegetables out of the center of the sheet pan is an important step! This will help the vegetables and pork roast and brown evenly.
Bake at 400 degrees F for about 25 minutes.
If adding broccoli, take the sheet pan out of the oven and add chopped broccoli florets. Stir broccoli into the veggies.

Bake for an additional 25 minutes, or until your pork reaches an internal temperature of at least 145 degrees F and the veggies are roasted.
While the sheet pan meal is baking, melt butter and stir in minced garlic and parsley.
Take the sheet pan out of the oven, brush the pork and vegetables with the garlic butter and add about half of the Parmesan cheese.
Place the sheet pan dinner back in the oven for just a couple of minutes.

Serve Parmesan Garlic Pork Tenderloin and Vegetables
Once your pork tenderloin and vegetables are fully cooked, it’s time to eat!
Allow the pork to rest for a few minutes then use a knife to slice the pork tenderloin into thin pieces before serving.
Serve the sheet pan meal with the remaining Parmesan cheese. The best thing about this meal is that it is a complete family dinner in one pan!
I don’t usually serve anything else with this, but if you need an easy side it would be good with a salad, a roll, or some cheesy garlic bread!

If you have any leftovers store them in a refrigerator in an air tight container. Microwave leftovers until warm. You could also heat leftovers in an oven or air fryer if you want the vegetables to be crispier, but be careful not to dry out the pork.
You will love this Parmesan Garlic Pork and vegetables because it’s a one-pan meal, delicious, and you don’t have to worry about extra sides!
Tips and Substitutions
- I used a 2 lb Garlic and Herb marinated pork tenderloin. If you use a smaller or larger pork tenderloin, you may need to adjust the cook time.
- If you can’t find a Garlic and Herb pork tenderloin, choose one that sounds like it would go the best with the Parmesan Garlic flavor!
- I like using baby potatoes for this recipe because they can be cut quickly, you could use a couple of russet potatoes, but be sure to cut them into small uniform pieces, so they cook evenly.
- Adding the broccoli to the sheet pan meal about half way through cooking will help it not be overcooked.
- The carrots turn out tender, but with a little bit of bite to them. If you want more tender carrots slice them even thinner or you could parboil them before adding them to the sheet pan.
- I’ve found it’s best not to over crowd your sheet pan so all of the vegetables roast well.
- Avoid placing the pork on top of the vegetables, so they don’t steam instead of roasting.
