Easy Chicken Fried Rice
Chicken Fried Rice is easy to make at home and one of my favorite griddle recipes! The leftovers of this recipe reheat really well making it an awesome lunch prep.
I keep this recipe simple, but you can add anything you like to it! It’s made with chicken, bacon, frozen mixed vegetables, long grain white rice, eggs, soy sauce, sesame oil, and topped with green onions and your favorite sauce.
This is one of those recipes you can really add any veggies or meat you like!

Ingredients
- Sesame oil
- 1 lb chicken breast
- 6 slices of bacon, chopped
- 1 bag frozen mixed veggies
- 2 cups cooked and cooled long grain white rice
- Salt, pepper, garlic powder
- 4 eggs
- Soy sauce
- Chopped green onions
- Buffalo Wild Wings Sweet & Sour Sauce

Prep Chicken Fried Rice Ingredients
This recipe requires just a little bit of prep work before the actual cooking can take place!
I like to cook long grain white rice and let it cool and then chill in the refrigerator for at least a couple of hours before making the fried rice. Measure 2 cups of long grain white rice and cook it according to the directions on the package.
You can also cook the rice the night before you plan on making the recipe. This will help the rice not be sticky and get more of the fried rice texture.
Next, chop some green onions. I usually chop at least 4. Set those aside.

Chop at least 6 slices of uncooked bacon into small pieces. I usually use 6 slices, but you can really use as much bacon as you’d like in your fried rice.
The last thing you need to prepare for this recipe is the chicken. I like to cut it into small bite sized pieces and place it in a container before cooking.
All of these ingredients can be stored in the refrigerator until you are ready to cook.
Make Chicken Fried Rice
To start making this easy recipe, heat a griddle to about medium heat and add about 1 tbsp of sesame oil to the griddle. Add the chicken to the sesame oil. Season the chicken with some salt, pepper, and garlic powder.

Next, add the chopped bacon to the other side of the griddle Let the bacon and chicken cook and stir everything around.
Once the bacon is cooked, scoot the bacon over on the griddle and add the cooked rice on top of where you cooked the bacon. Add a little bit more sesame oil and season with salt, pepper, and garlic powder.

Next, add some soy sauce to the rice. I probably used about 1 tbsp of soy sauce, but you can add as much as you’d like. I also prefer to use low sodium soy sauce.
Add the bag of frozen veggies next to the rice.
Stir the rice and bacon together well. Next, make a well in the middle of the rice and add a little bit more oil and add 4 eggs.

Stir to scramble them and let them cook until they are done to your liking.
Mix in the chicken and veggies with the rice, bacon, and scrambled eggs.
Spread the rice out on the griddle and let cook until the rice is golden brown and fried. This is what will help your fried rice have that nice fried texture.

Take some time to really flip sections of the rice and let it get golden brown.
Serve Easy Chicken Fried Rice
Once the fried rice is nice and golden brown, top it with chopped green onions and your favorite sauce. I really like this with Sweet and Sour sauce! I used Buffalo Wild Wings Sweet and Sour sauce because it has a kick of heat, but you can use your favorite brand.
This recipe is also good served with some egg rolls.

The leftovers of this recipe reheat really well in the microwave making it an awesome lunch prep! We like to have it for dinner one night and then eat the leftovers for lunch the next couple of days.
Tips and Frequently Asked Questions
- I used 1 lb of chicken breasts in this recipe, but you could use boneless, skinless chicken thighs if you prefer thighs.
- Use 1 lb of steak instead of chicken to make an easy steak fried rice.
- You need 2 cups cooked and cooled/chilled rice for this recipe. I use long grain white rice and cook it according to the directions on the package. Store in the refrigerator for at least 2 hours before making the fried rice.
- Chilling the rice will help it not be sticky and give it a better fried rice texture.
- I like to use low sodium soy sauce.
- I keep the seasonings simple in this recipe with just salt, pepper, and garlic powder, but you can add any extra seasonings you like!
- If you don’t have a griddle you can cook this recipe inside on the stove. Use a large pan, Wok, or divide the fried rice between two skillets to ensure it gets crispy and golden brown.
