Grinder Salad Sandwiches
The viral grinder Salad sandwiches are an easy lunch or dinner that take sandwiches at home to a whole new level.
They’re made with ham, salami, pepperoni, cheese, and topped with the viral grinder Salad and seasoned tomatoes.
This easy recipe will turn sandwich night into the most exciting night of the week. Everything can easily be measured and chopped ahead of time so dinner is ready in minutes when you get home from work!

Ingredients
- Hoagie Rolls
- Ham
- Salami
- Pepperoni
- Provolone
- Mayo
- Red wine vinegar
- Salt, pepper, dried oregano, Italian seasoning, garlic powder, and red pepper flakes
- Pepperoncini peppers or banana peppers, drained
- Parmesan cheese
- Shredded iceberg lettuce
- Red onion thinly sliced
- Sliced tomato
Make Grinder Salad Sandwiches
To start making the viral grinder Salad sandwiches preheat your oven to 400 degrees F.
Layout the bread and top with lunch meat of your choice. I used ham, salami, and pepperoni. You can really use as much meat on the sandwiches as you’d like!
My family likes a little less meat on our sandwiches so we do one layer of each.
Next, top with a couple of slices of your favorite cheese. We like to use provolone cheese, but any will work.
Bake in the oven for a few minutes until the cheese is melted.
While the cheese is melting grab a large bowl and mix together 1/2 cup of mayo and 2 Tablespoons red wine vinegar.
Season with 1/2 teaspoon each salt and pepper, 1 teaspoon each oregano, Italian seasoning, garlic powder, and 1/2 teaspoon red pepper flakes.
Stir well that well until everything is combined!
Once combined add in 1/3 cup pepperoncini peppers or banana pepper rings, 1/3 cup Parmesan cheese, 1/2 a thinly sliced red onion, and an 8 ounce bag of shredded lettuce.
Sometimes the pepperoncini peppers can be spicy, so I usually use banana peppers.
Stir everything together well so it’s evenly coated.
Serve Grinder Salad Sandwiches
Once the cheese is melted and the sandwiches are hot, top them with more Parmesan cheese. Add slices of tomato that have been seasoned with salt and pepper.
Lastly, top the sandwiches with a generous portion of the grinder salad mixture. I served these with some fries to keep it easy!
Tips and Frequently Asked Questions
- This recipe made 4 large sandwiches.
- I used an 8 oz bag of pre-shredded lettuce to save some time making this recipe, but you could shred your own ice berg lettuce if you prefer to.
- Pepperoncinis peppers have a little bit of spice to them, if you don’t want spice you could use mild banana pepper rings instead.
- I prefer to shred my own Parmesan cheese from a block for better texture and flavor than the pre-shredded cheese.
- Be sure to top the sandwiches with the Grinder Salad right before serving, so the sandwiches don’t get soggy.
- I like buying bread from the bakery at my local Schnuck’s, but you can use any bread you like.
