Chicken Grinder Salad Sandwiches

The Viral Grinder Salad Sandwiches are easy to make and so good! My family loves making the original version, but this version made with chicken instead of lunch meat takes the sandwich to a whole new level!

Seasoned chicken, melted provolone cheese, sliced tomatoes, and the grinder salad mixture make this sandwich so good! I love buying the “day old” bread from Jimmy John’s for recipes like this, but you can use any of your favorite sandwich bread.

Chicken Grinder Salad Sandwiches

Ingredients

  • 1/2 cup of mayo
  • 2 TBSP of red wine vinegar
  • 1/2 tsp of salt
  • 1 tsp of dried oregano, Italian seasoning, and garlic powder
  • 1/2 tsp of red pepper flakes
  • 1/3 cup pepperoncinis peppers drained
  • 1/3 cup of shredded Parmesan cheese
  • 8 oz shredded iceberg lettuce
  • 1/2 of a red onion thinly sliced
  • Sandwich bread
  • Provolone
  • Sliced tomato
  • 1 lb chicken breast
  • 1/2 tsp salt and pepper
  • 1 tsp garlic powder and paprika
  • 2 tbsp butter

Make Chicken Grinder Salad Sandwiches

To start making this recipe, cut one pound of chicken breasts into thin strips.

Heat a large skillet over medium high heat and melt 2 tbsp of butter. Chop chicken into small strips and add to the skillet. Season with salt, pepper, garlic powder, and paprika.

Seasoned Chicken

While the chicken is cooking, in a large bowl mix together mayo, red wine vinegar, salt, oregano, Italian seasoning, garlic powder, and red pepper flakes. Stir well.

Add pepperoncinis peppers or banana pepper rings, 1/3 cup Parmesan cheese, 1/2 a sliced red onion, and shredded lettuce. Stir everything together well and let sit until the sandwiches are ready!

Next, preheat the oven to 400 degrees. Layout bread and add a couple of scoops of the cooked chicken and top with provolone cheese. Bake for a few minutes until the cheese is melted.

For the sandwich bread I like using Jimmy John’s “day old” bread, but any sandwich bread will work for this recipe.

Serve Chicken Grinder Salad Sandwiches

Once the bread is starting to get toasty and the cheese is melted, it’s time to eat!

Top the sandwiches with more Parmesan cheese. Add slices of tomato (that have been seasoned with salt and pepper) to the sandwich. Finally, add a large scoop of the grinder salad mixture.

I served these sandwiches with some frozen fries, but my homemade air fried potato wedges, baked macaroni and cheese, or potato salad would also be a great sides for these sandwiches!

  • This recipe made 3 large sandwiches.
  • I bought “day old” bread from Jimmy John’s, but any of your favorite sandwich bread will work for the recipe.
  • I used an 8 oz bag of pre-shredded lettuce to save some time making this recipe, but you could shred your own ice berg lettuce if you prefer to.
  • Pepperoncinis peppers have a little bit of spice to them, if you don’t want spice you could use mild banana pepper rings instead.
  • I prefer to shred my own Parmesan cheese from a block for better texture and flavor than the pre-shredded cheese.
