Marinara Chicken Sandwiches

Ingredients

  • 2 chicken breasts
  • 1/2 tsp each of salt and pepper
  • 1 tsp each of garlic powder, paprika, and Italian seasoning
  • 6 TBSP butter
  • Marinara Sauce
  • 4 Buns
  • Shredded or sliced mozzarella cheese
  • Fresh parsley
  • 1 TBSP minced garlic

How to make Marinara Chicken Sandwiches

To make Marinara Chicken Sandwiches, start with two chicken breasts. I like to cut the chicken breasts in half lengthwise to make the chicken thinner.

Season the chicken well with salt, pepper, garlic powder, paprika, and Italian seasoning on both sides.

In a large skillet over medium high heat, melt 2 tbsp of butter. Once the butter is melted and the skillet is hot add the chicken to the skillet. Sear the chicken for a few minutes on each side. This will not fully cook the chicken.

After both sides are seared, remove the skillet from the heat and top each piece of chicken with a spoonful of your favorite Marinara sauce.

Add either shredded or sliced mozzarella cheese on top of the chicken and place the skillet in the oven at 400 degrees for about 10 minutes.

While the chicken finishes cooking in the oven, mix together 4 tbsp of butter, 1 tbsp of minced garlic, and a small handful of fresh chopped parsley.

Spread this mixture on four buns. Toast the buns in a skillet over medium high heat until golden brown.

Once the chicken has reached an internal temp of at least 165 degrees remove the pan from the oven and build the sandwiches.

We kept these sandwiches pretty simple and just topped them with a little bit more fresh parsley. I served these with a salad and some air fryer potato wedges!

  • I used sliced mozzarella cheese, but shredded or another type of cheese would be good on these too.
  • For the buns I used a mixture of melted butter, minced garlic, and fresh parsley. You could also use garlic powder and dried parsley flakes if needed.

  • Butterfly cut chicken breasts to make them thinner.
  • Season with salt, pepper, garlic powder, Italian seasoning, and paprika on both sides.
  • Heat a skillet with 2 TBSP of butter over medium high heat and quickly sear chicken (about 2-3 min on each side) in the skillet. This won’t fully cook the chicken.
  • Remove the skillet from the heat and add a good spoonful of marinara on top of each piece of chicken.
  • Top with sliced or shredded mozzarella cheese.
  • Bake in the oven at 400 degrees for about 10 minutes or until it reaches an internal temp of 165 degrees.
  • While the chicken finishes cooking in the oven, combine 4 TBSP butter, 1 TBSP minced garlic, and some fresh chopped parsley in a bowl. Stir together well.
  • Spread the butter mixture on the buns and toast them in a skillet over medium heat until golden brown.
  • Build sandwiches and top with more parsley.
  • Enjoy! This recipe made four sandwiches, but you could easily use more chicken to make as many sandwiches as you need.
