Sausage Pancake Bites
These mini Sausage Pancake Bites are an easy breakfast prep that the whole family loves! This recipe makes 48 mini pancake bites and they reheat well in the microwave or air fryer. I like making these on a Sunday and having them ready to re-heat as an easy breakfast during the week.

Ingredients
- 2 cups of Hungry Jack Pancake Mix
- 1 1/2 cups of water
- 12 precooked breakfast sausage links
- 1 cup shredded cheddar cheese
- 1/4 cup maple syrup
Make Sausage Pancake Bites
To make this easy recipe, start by preheating the oven to 400 degrees. Mix together 2 cups of pancake mix with 1 1/2 cups of water. Stir the pancake mix together and add the syrup and shredded cheddar cheese.
I used Hungry Jack pancake mix, but any pancake mix should work for this recipe. I would be sure to follow the directions on the package of pancake mix you are using and then follow the rest of the recipe.
Next, cut each of the fully cooked sausage links into 4 pieces. I used the refrigerated sausage links, but you can also use the frozen ones. If using the frozen ones I would partially cook them in the microwave before cutting them into smaller pieces.
Pour the pancake mix into mini muffin pans only filling them about half way full. Next, place a piece of the sausage into each one.
I prefer to use these silicone mini muffin pans as they are easier to pop out. If you are using regular mini muffin pans be sure to spray the pan with some cooking spray so the pancake bites don’t stick.
These will bake in the oven at 400 degrees for 12-15 minutes. It helps to let them cool for a few minutes before trying to remove them from the mini muffin pans.
Serve Mini Sausage Pancake Bites
Once the pancake bites are baked it’s time to eat! I like serving these with some maple syrup on the side for dipping and some fruit!
Tips and Frequently Asked Questions
- I used Hungry Jack Buttermilk Pancake Mix, but any pancake mix should work for this recipe. I would mix the pancake mix following the directions on the pancake mix you are using then follow the rest of the recipe.
- I used 12 Jimmy Dean fully cooked refrigerated sausage links, but any sausage links should work. If the ones you are using are frozen I would microwave or brown them in a skillet before cutting them into pieces and adding them to the pancakes.
- Chicken or Turkey sausage links could also be used.
- I prefer to bake these in a silicone mini muffin pan as they are easier to pop out. If you use a normal muffin pan be sure to spray it with cooking spray.

Easy and super yummy. I made mine in regular sized muffin pan and my 13 yr old grandson loved them. Will definitely make again!
Easy and delicious! I used Jimmy dean’s sausage and cooked the sausage 1st in balls in the air fryer. Then I put the batter on top of the sausage balls in a normal muffin pan. It was a hit! My family love them!
