Breakfast Bowls

Easy Breakfast Bowls are perfect for breakfast or even breakfast for dinner! I make them with tater tots, sausage, bacon, eggs, cheese, and gravy. This is an easy recipe the whole family loves. The leftovers are even awesome for making breakfast burritos!

Ingredients

  • 32 oz bag of tater tots
  • 1 lb breakfast sausage
  • 6 pieces of bacon
  • 6 eggs
  • A splash of milk
  • Salt and pepper
  • 1 cup shredded cheddar cheese
  • Gravy Packet (or ingredients below to make homemade gravy)
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 1/2 cups milk

Prep the Breakfast Bowls

To make the easy breakfast bowls, I like to start by gathering all ingredients. This is also a great time to go ahead and chop 6 pieces of bacon up into small pieces.

Add a 32 oz bag of frozen tater tots to an air fryer and cook at 400 degrees for 20-25 minutes shaking them around a few times while they cook.

Make the Eggs, Sausage, and Bacon

Brown one pound of breakfast sausage in a skillet over medium high heat. Before the sausage is browned, scoot the sausage to one side and add the chopped bacon. Let the bacon cook for a few minutes before stirring all the bacon and sausage together. Cook until sausage is browned and bacon is cooked through.

After the sausage and bacon is cooked, drain the grease well from the meat and remove it from the skillet. Pour the extra grease out of the skillet.

In a large bowl, whisk together 6 eggs, a splash of milk, salt, and pepper. Cook eggs in the hot skillet over medium heat to your liking.

Once the eggs are cooked add the sausage and bacon back to the skillet with the eggs. Top this mixture with one cup of shredded cheddar cheese. Sit the skillet back on the warm stove to melt the cheese or pop it in the oven under broil for just a couple of minutes to melt the cheese.

Make the Gravy

The last step to making easy breakfast bowls is making the gravy! You can use a white gravy packet or make homemade gravy. If you choose to make homemade gravy melt 2 tbsp of butter in a skillet over medium heat. Add 2 tbsp of flour to the skillet and stir until it is well incorporated and starting to thicken.

Pour 1 1/2 cups of milk into the skillet and stir continuously. Keep cooking until the gravy reaches your desired consistency. If it gets too thick you can always add a little bit more milk to thin it out.

Serve Easy Breakfast Bowls

To serve the easy breakfast bowls I add a handful of the crispy tater tots to a bowl. Pour the white gravy over the tater tots. Add a large scoop of the cheesy eggs, sausage and bacon.

  • Use a white gravy packet or make homemade gravy for this recipe.
  • If you don’t want to use tater tots, you could cook chopped potatoes in the air fryer instead using my easy air fryer potato recipe.
  • I scrambled eggs for this recipe, but a runny fried egg would also be good over the top of the tater tots, gravy, sausage, and bacon.
  • I kept seasonings simple with just salt and pepper for this recipe, but you can add any seasonings you like.

Ingredients

Instructions

  • Cook tater tots in an air fryer at 400 degrees for about 20-25 minutes.
  • Brown sausage in a skillet over medium high heat. Before the sausage is browned add the 6 chopped up pieces of bacon to the skillet with the sausage. Stir well and cook until sausage is browned and bacon is cooked through.
  • Remove the the sausage and bacon from the skillet and drain grease. Set aside.
  • In a bowl, whisk together 6 eggs, a splash of milk, salt, and pepper. Cook eggs to your liking in the skillet.
  • Once eggs are cooked, add the sausage and bacon back to the skillet with the eggs. Top with 1 cup of shredded cheese. Let sit on the stove or pop under the broiler for just a minute to melt the cheese.
  • Make a white gravy packet or make homage gravy. To make gravy, melt 2 tbsp of butter in a skillet over medium heat. Add 2 tbsp of flour and stir until well incorporated and starting to thicken. Add 1 1/2 cups of milk and stir consistently until you get a consistency you like. Season to taste with salt and pepper.
  • Build breakfast bowls by adding tater tots, gravy, eggs, bacon, and sausage to a bowl.
  • Enjoy!!

Notes

If there are any leftovers this mixture makes great breakfast burritos! I used the leftover tater tots, eggs, sausage, and bacon to make a few breakfast burritos and put them in a freezer bag in the freezer.

  3. Homemade gravy is best w/meat drippings. Nice make-ahead ingredients and throw together and reheat in microwave or oven w/the cheese in one big casserole dish for reunion. Worked great.
