This Steak Cheese and Rice made on the griddle is super easy to make and so good! If you don’t have a griddle this recipe can definitely be made inside on the stove.

There’s nothing better than cilantro lime rice, steak, and queso wrapped up in flour tortillas and topped with fresh Pico de Gallo!

Easy Steak Cheese and Rice is a great way to switch up Taco Tuesday and leftovers reheat well for lunch the next day.

Ingredients

  • 1 lb NY Strip Steak
  • 1 tbsp avocado oil
  • 1/2 tsp each salt and pepper
  • 1 tsp each cumin and dried cilantro
  • 2 tsp chili powder
  • 1/4 cayenne
  • 3 packs Benโ€™s Original Ready Rice Cilantro Lime
  • 1/2 cup water
  • Panchoโ€™s queso
  • Pico de Gallo
  • Flour tortillas
  • Cilantro

Make Easy Steak Cheese and Rice

To start making this easy dinner recipe, cut steak into thin strips and set aside.

Heat a griddle over medium heat. Add some oil to the griddle. I usually use olive or avocado oil, but you can use any oil you normally cook with.

Next, add the packs of rice to the griddle and pour a little bit of water over the rice. Cover with a griddle dome and let cook until the rice is tender.

The packs of Benโ€™s Original Ready Rice Cilantro Lime keep this recipe super easy and quick. If you aren’t a fan of the ready rice, you could make your own rice on the stove (following the directions on the package) and then add the cooked rice to the griddle to toast it up and season it to your liking.

Once the rice is cooking, add 1 tbsp oil to the other side of the griddle and add the steak.

Seasoned Steak

Season the steak with salt, pepper, cumin, dried cilantro, chili powder, and cayenne.

I prefer to use this blend of seasoning, but you could use a Taco seasoning packet instead if you prefer. Stir the steak and seasoning together well.

Once the steak is cooked how you like it, combine the steak and rice. Remove it from the griddle.

Heat up some white queso and pour the queso over the steak and rice.

I like using the Pancho’s brand from Sam’s club, but any microwavable white queso should work. I also have a homemade white queso recipe you could make if you prefer that.

Top the Steak Cheese and Rice with fresh cilantro. If you aren’t a fan of cilantro feel free to skip that!

Serve Steak Cheese and Rice

Heat up tortillas on the griddle over low heat until they are golden brown. Top with the cheesy steak and rice. Serve with fresh Pico de Gallo. These are also good served with some sour cream and taco sauce if you aren’t a fan of Pico de Gallo.

Easy Steak Cheese and Rice

This recipe can really be made with 1 lb of steak, chicken, or ground beef. Leftovers also reheat well for lunch the next day. We also like scooping up the steak and rice with tortilla chips.

When I know I’m making this recipe, I like to go ahead and make the Pico de Gallo earlier in the day or even the night before. I feel like the flavors are better and it keeps the cooking process of the Steak Cheese and Rice super simple.

If you don’t want to make homemade Pico de Gallo, you could also buy some store-bought instead. Pico is really easy to make, it just takes some time to get everything washed and chopped.

  • I typically cook with Olive oil or avocado oil, but you can use any oil you normally use.
  • Any store bought or homemade white queso will work for this recipe. I usually use Panchoโ€™s from Samโ€™s Club. Check out my homemade white queso recipe here!
  • I used 1 lb of NY Strip Steak, but sirloin or skirt steak would also work well in this recipe.
  • 1 lb of chicken breast could be substituted for the steak if you would rather make Easy Chicken Cheese and Rice.
  • Sometimes I also like to add 1 tbsp of minced garlic to the steak once it is cooked.
  • I used 3 packs of Benโ€™s Original Ready Rice Cilantro Lime, but you could use any rice your family likes!
  • I make homemade fresh Pico de Gallo, but you could use store-bought if you are short on time.
  • I like to make the Pico de Gallo earlier in the day or even the night before to keep the cooking process of the Steak Cheese and Rice super simple!
