Pomegranate Seed Guacamole
This Pomegranate Seed Guacamole is one of my favorite appetizers. There is a local Mexican restaurant that serves a similar guacamole and I’ve always loved it. This is a simple appetizer or side dish that can be thrown together in just a few minutes. We love to serve this for holiday parties because it’s colorful and delicious!
Ingredients
- 3 avocados
- 1/3 cup onion
- 1 jalapeño
- 1/4 cup cilantro
- 1/2 cup pomegranate seeds
- 2 tbsp lime juice
- Salt, pepper, garlic powder
Prepping the Pomegranate Seed Guacamole
Since this is an appetizer that takes no actual cooking the prep work is pretty simple. Just slice open 3 ripened avocados and remove them from the shell.
Next, you’ll just dice up half a small onion along with a jalapeno and your washed cilantro. If you are using seeds from a fresh pomegranate you can slice that open at this point and remove them as well.
Making the Pomegranate Seed Guacamole
Grab a medium sized bowl and use a spoon to mash your avocados. Then just add in the diced onions, jalapenos, cilantro, and pomegranate seeds.
To finish it off squeeze in the juice of 1 lime or about two tablespoons and season to taste with salt, pepper, and garlic. Stir well so everything is combined and it’s ready to serve!
Serving the Pomegranate Seed Guacamole
My family enjoys this Guacamole year round on taco night, but it’s perfect for the holiday season. It’s really quick and simple to throw together and full of festive colors.
We like to pair it with the red and green Christmas tortilla chips to serve at holiday parties. On the flip side of the calendar this also makes the perfect easy pool day appetizer.

Tips and Frequently Asked Questions
- To save time I like to buy a container of Pomegranate seeds from the produce section.
- Guacamole is best served fresh to prevent browning, but if you press saran wrap against the guacamole when storing in the refrigerator it can help prevent this.
- I like to use the juice of fresh lime for this recipe for better flavor, but bottled lime juice will work too.
- Because of its festive colors this one is perfect for the holidays, but it also makes a refreshing pool day snack.

Instructions
- Chop the onion, jalapeño, and cilantro. Add the insides of three avocados to a bowl.
- Use a spoon to mash up the avocado. Add the chopped onion, jalapeño, cilantro, pomegranate seeds, and the lime juice. Season to taste with salt, pepper, and garlic powder. Stir everything together well.
- This is best if served immediately. The avocados will start to brown usually by the next day.
I made this tonight and it was so good! I love the little bursts of flavor from the pomegranate seeds. Definitely a winner!
