Make Chocolate Chip Bacon Pancake Bites

To make this easy breakfast, start by cooking your bacon.

The easiest way I’ve found to cook bacon is by baking it in the oven!

Cook your bacon on a sheet pan lined with parchment paper in the oven at 400 degrees F for 20-25 minutes.

Once the bacon is cooked how you like it, drain the grease really well, chop the bacon into small pieces, and set aside.

Mix pancake mix with water according to the directions on the box. I used a complete pancake mix that just calls for adding water.

Any pancake mix can be used for this recipe, just be sure to follow the directions on the box of pancake mix you are using.

Stir in cooked bacon, semi sweet chocolate chips, and syrup.

Pour into two mini silicone muffin pans for best results. If using nonstick, be sure to grease the pan well.

My favorite silicone muffin pans are on Amazon if you want to check them out.

This is optional but you can top the mini pancakes with a little bit of the bacon and chocolate chips before baking them.

Bake at 400 degrees F for 12-15 minutes.

You will know the pancake bites are ready when a toothpick comes out clean from the center of one of the mini pancake bites.

This made 48 mini pancake muffins.

Serve Chocolate Chip Bacon Pancake Bites

Once the pancake bites are fully cooked, it’s time to eat! Serve with more syrup for dipping and enjoy! I like serving these little pancake bites with fresh fruit on the side.

These would also be great with some Greek yogurt or scrambled eggs for extra protein!

Store any leftovers in an air tight container in the refrigerator or in a freezer bag in the freezer. These pancake bites reheat well from the fridge or freezer.

I typically reheat them in the microwave for 30 seconds to 1 minute at a time until they are hot! It helps not to overcrowd the plate if they are frozen.

  • You can use any pancake mix you have or make it homemade. I suggest following the directions for mixing together the pancake mix for the brand that you buy. I really like Krusteaz Buttermilk Pancake Mix for this recipe.
  • My pancake mix was a complete pancake mix which means I only needed to add water.
  • Through testing this recipe I found that it is best to fill the muffin pan only about 3/4 of the way. The chocolate chip bacon pancake muffins will rise nice and fluffy as they bake.
  • I used regular bacon for this recipe, but you could use turkey bacon or swap it for pork or chicken breakfast sausage. Maple flavored breakfast sausage would also be really good!
  • Cook the bacon before mixing it into the batter and drain any extra grease well.
