Ingredients for Blueberry Sausage Pancake Muffins

Make Blueberry Sausage Pancake Muffins

To make these easy pancake muffins, cook 1 lb of breakfast sausage in a pan over medium-high heat. Once the sausage is fully cooked be sure to completely drain any extra grease well.

In a large bowl mix together 4 cups of Pancake Mix with water following the directions on the box. I suggest following the directions on the pancake mix you use!

This is a complete pancake mix that only needs water.

Bowl of pancake mix, browned sausage, blueberries, and syrup

Next, add the browned sausage, blueberries, and maple syrup.

I like to keep a little bit of the sausage and blueberries separate to add to the top the breakfast muffins, but that is optional. Stir well.

Carefully fill a silicone muffin tray with the pancake mix about 3/4 of the way full.

I prefer to use these silicone muffin trays from Amazon because the pancakes don’t stick to them and you can easily pop them out!

If using nonstick, be sure to grease the pan. Top with the reserved sausage and blueberries if desired.

Add a tiny cube of butter to the top of each muffin.

The butter adds a little bit of buttery richness to the pancake muffins, but they also turn out perfectly fine if you don’t want to add the butter to this recipe.

Bake at 400 degrees F for 18-20 minutes or until a toothpick comes out clean from the center of the pancake muffins.

Serve Breakfast Pancake Muffins

Once the sausage pancake muffins are fully baked, it’s time to eat! I like serving these with some fruit on the side and extra syrup for dipping.

These pancake bites are also good served with some Greek yogurt or scrambled eggs for extra protein!

Pancake Muffins with blueberries and sausage plated

Any pancake mix muffins that are leftover can be stored in a container or zip lock bag in the refrigerator or freezer.

These make a great breakfast meal prep because pancakes reheat well in the microwave.

Tips and Substitutions

  • You can use any pancake mix you have or make it homemade. I suggest following the directions for mixing together the pancake mix for the brand that you buy. I really like Krusteaz Buttermilk Pancake Mix for this recipe.
  • Through testing this recipe I found that it is best to fill the muffin pan only about 3/4 of the way. The blueberry pancake muffins will rise nice and fluffy as they bake.
  • I used regular breakfast sausage for this recipe, but you could use a turkey or chicken breakfast sausage. Maple flavored breakfast sausage would also be really good!
  • Cook the sausage before mixing it into the batter and drain any extra grease well.
  • Fresh blueberries will work the best for these pancake bites, but frozen blueberries could be used. If using frozen, be sure to add them straight from the freezer to help prevent them releasing too much liquid and color bleeding.
  • Either pancake syrup or pure maple syrup can be used in this recipe.
  • This recipe makes 32 pancake muffins.

Frequently Asked Questions

Can I freeze pancake muffins?

Yes, these blueberry sausage pancake muffins can be stored in the freezer in a container or a freezer bag.

How do I reheat pancake muffins?

I typically reheat the pancake muffins from the refrigerator or freezer, on a plate in the microwave. I heat the pancakes up for about 30-45 seconds at a time until they are hot. It helps to not overcrowd the plate (especially if reheating them from the freezer).

Can I make these pancake bites in a mini muffin pan?

Yes, if you prefer to make the easy breakfast prep into mini muffins you can. Pancake recipes like this one usually bake at 400 degrees F for 12-15 minutes in a mini muffin pan.

Can I use frozen blueberries?

I think fresh blueberries work best for this recipe, but the frozen blueberries can be used. If you are using frozen blueberries be sure not to thaw them first. Adding them straight from the freezer will help make sure they don’t release too much moisture or bleed too much color into the muffins.
