Mini Loaded Breakfast Pancake Bites are a super easy breakfast made with pancake mix, sausage, bacon, cheese, and maple syrup. I like making these in a mini muffin pan and they reheat well for an easy breakfast prep!

My Breakfast Pancake Casserole has almost all of the same ingredients as these mini pancake bites, but is made in a 9×13 baking dish! This pancake casserole is sweet, savory, and so delicious!

  • Pancake Mix
  • Water
  • Breakfast sausage
  • Bacon
  • Shredded Colby Jack cheese
  • Maple syrup

Make Loaded Mini Breakfast Pancake Bites

To start making this super easy breakfast recipe, start by cooking your bacon and sausage.

I prefer to bake the bacon on a sheet pan lined with parchment paper in the oven at 400 degrees F for 20-25 minutes. While that is cooking, brown the breakfast sausage in a pan.

Drain the grease really well from both. Chop the bacon and set both aside.

Mix pancake mix with water according to the directions on the box.

Stir in cooked sausage, bacon, cheese, and syrup.

Pour into a mini muffin pan. I prefer to use these silicone mini muffin pans from Amazon. They make it super easy to pop out the mini muffins!

If you are using a normal mini muffin pan I would be sure to grease the baking pan first.

This is optional but you can top the mini pancakes with a little bit of the cheese, sausage, and bacon before baking them.

Bake at 400 degrees F for 12-15 minutes.

This made 48 mini pancake muffins.

Serve Loaded Mini Pancake Bites

Once the pancake bites are fully cooked, it’s time to eat!

Dip in more syrup and enjoy! Let me know if you try it out! I like serving mini pancake bites with fresh fruit.

If you have any leftovers of the pancake bites they will store in the refrigerator or freezer well. I usually microwave them on a plate from the refrigerator or freezer until hot.

I heat them up for 30 seconds to 1 minute at a time until they are hot.

Since this recipe does reheat well it’s great to make a batch on a Sunday and have breakfast ready to just heat up! I also always keep fresh fruit washed and prepped in the refrigerator, so my kids can easily grab some fruit to have with the mini pancake bites.

  • My family likes to use mild pork sausage for this recipe, but you could also use chicken or turkey sausage.
  • Make sure to cook the breakfast sausage and bacon first and drain it well with a paper towel!
  • I like the texture and flavor of freshly shredded Colby Jack better, so we buy blocks of cheese and shred it at home every week!
  • Shredded cheddar cheese would also be good in this recipe if you don’t have Colby Jack.
  • I like to use a silicone muffin pan from Amazon to make these so I do not spray the pan with cooking spray. If you are using a pan that isn’t silicone, it would be best to grease it ahead of time!
  • We always keep a bag of these in the freezer and to reheat them it just takes about a minute in the microwave.
