Ingredients for Ground Beef Potato Casserole
- Ground beef
- Salt, pepper, ground mustard, onion powder, garlic powder, smoked paprika
- Ketchup
- Mustard
- Dill pickle juice
- Frozen southern style/diced hash browns
- Sour cream
- Condensed cheddar cheese soup
- Shredded Colby Jack cheese
- Bacon, cooked & chopped
- Green onions, chopped

Make Cheeseburger Potato Casserole with Hash Browns
If you don’t have any bacon leftover from breakfast, you will need to cook a few pieces of bacon for this recipe. I like to bake bacon on a sheet pan lined with parchment paper for about 25 minutes at 400 degrees F.
Once the bacon is cooked, drain the grease, chop the bacon into small pieces, and set aside.
If you want to keep this recipe super easy, you could just use bacon bits!
Heat a large skillet over medium-high heat.
Brown 1 lb of ground beef with chopped onion.
Season with salt, pepper, ground mustard, onion powder, garlic powder, and smoked paprika. Drain any extra grease from the meat.


Next, add the ketchup, mustard, and pickle juice. Stir well.
Spray a 9×13 dish with cooking spray.
Combine diced hash browns, ground beef, sour cream, condensed cheddar cheese soup, and 1 cup of shredded Colby Jack cheese.


Mix together well and spread out evenly in the pan. Top with 1 more cup of shredded cheese and bacon.
Bake at 400 degrees F covered with foil for 1 hour.
Uncover and let the casserole continue cooking for a couple of minutes to brown the top.
You could even broil the casserole for just a minute, just be sure to watch it so it doesn’t burn.
