Easy One-Pan Chicken Dinner

My family loves this recipe because it’s an easy flavorful one-pan dinner everyone enjoys! Clean up is super easy since everything is made in one skillet.
Mississippi Chicken is a popular comfort food recipe combining chicken, butter, ranch seasoning, and Aus Jus seasoning with a tangy flavor from the pepperoncini. In this chicken and rice skillet meal the rice soaks up all of those flavors and is topped with mozzarella cheese.

Ingredients
- Butter (unsalted)
- Chicken breast, cut into cubes
- Onion, chopped
- Au Jus Gravy seasoning
- Ranch Seasoning
- Black pepper, smoked paprika, dried parlsey
- Minced garlic
- Banana pepper rings or Pepperoncini rings
- Jasmine rice, rinsed
- Chicken broth
- Shredded mozzarella cheese
- Cream cheese

Make Mississippi Chicken and Rice Skillet
To make this easy one-pan meal, start by chopping an onion. Next, cut 1 lb of chicken breasts into cubes.
Heat a large skillet over medium-high heat.


Melt butter in the skillet then add your chicken and onions. Season with 1 tbsp each of an Au Jus Gravy packet and a ranch seasoning packet. Season with some pepper and smoked paprika. Stir and let cook.
Once your chicken is almost fully cooked, add minced garlic, banana peppers rings, rinsed rice, and chicken broth. Stir well.
Bring your skillet to a quick boil. Once your whole skillet is bubbling, cover with a lid and lower the heat to about medium/medium low. Cook for about 18 minutes, or until your rice is tender.


Stir in shredded mozzarella cheese and 2 oz of cream cheese.
Top with a little bit more cheese and some more banana pepper rings if desired.
Let sit covered until the cheese melts or pop it in the oven under broil.

Serve One-Pan Mississippi Chicken and Rice
Once the cheese is melted, it’s time to eat! Top with some dried parsley to give the kids something to talk about at the dinner table and serve!
I served this with a salad, but you could also serve roasted broccoli, green beans, or any vegetable your family likes!

If you have any leftovers, store them in an air tight container in the refrigerator. Reheat a plate in the microwave until warm.

Tips and Substitutions
- I use Mild Banana Pepper Rings in this recipe, so that my kids can eat it! Sometimes Pepperoncini rings are pretty spicy. Use whichever you prefer, just know the Pepperoncini rings might make this dish spicy.
- I used 1 lb of chicken breast cut into cubes, but you could use boneless skinless chicken thighs or even ground chicken.
- I love how mozzarella cheese melts into rice skillet meals, but you could use provolone, pepper jack, or Monterey Jack cheese instead!
- Jasmine Rice cooks pretty consistently in rice skillet meals so I tend to use that for these one-pan recipes. You can use regular long grain rice, but it might take a little bit longer to cook or need more chicken broth.
- The rice goes in the skillet uncooked and rinsed. It will cook right in the chicken broth in the pan.

What rice works best in Mississippi Chicken and Rice?
From testing several of these rice skillet meals, I’ve found that Jasmine rice cooks consistently. It cooks fairly quickly (about 20 minutes), absorbs flavors, and stays nice and tender. You can use regular long grain white rice instead, but it may need to cook a little bit longer I need a little bit more chicken broth.
Why rinse the rice?
I always rinse jasmine rice before cooking it. Rinsing the rice will help remove excess starch and result in fluffier rice instead of sticky rice. Just be sure to drain the rice well before adding it to the recipe.
Can I use chicken thighs instead of chicken breasts?
Yes, boneless skinless chicken thighs cut into cubes would work really well in this recipe! Chicken thighs stay nice and juicy!
Is Mississippi Chicken salty?
Mississippi Chicken recipes CAN turn out salty, but that is why I only use 1 tbsp each of an Au Jus Gravy packet and a ranch packet. If you used both entire packets I think this recipe would be salty.
Can I use banana pepper rings instead of pepperoncini?
Yes, I actually prefer to make Mississippi Chicken recipes with mild banana pepper rings instead of pepperoncini. The mild banana pepper rings are not spicy at all. This way my kids can eat it without complaining. If you like the spice from pepperoncini use those!
Can I make this recipe without the cream cheese?
The cream cheese adds a nice rich creaminess to the Mississippi Chicken and Rice, however, if you’d rather not use it you can leave it out!
