Make Blueberry Sausage Pancake Casserole
This recipe is simple and takes very minimal prep work!
To start just preheat your oven to 375 degrees Fahrenheit and brown one pound of breakfast sausage draining the grease well.
Next, grab a large bowl and mix together 4 cups of Pancake Mix with water following the directions on the box.
Once combined, stir in the browned sausage, blueberries, and maple syrup.

I like to keep a little bit of the sausage and blueberries separate to add to the top the breakfast casserole, but that is optional.
Before baking, grease a 9×13 oven safe dish and use a spatula to spread your batter evenly across the pan.
Top with the reserved sausage and blueberries.

Bake at 375 degrees F for about 45 minutes or until a toothpick comes out clean from the center of the pancake casserole.

- I used 1 lb of regular breakfast sausage, but you could use maple breakfast sausage for a stronger maple flavor. Just be sure to drain the grease from the sausage well.
- I used about 1 1/2 cups of fresh blueberries for this recipe.
- In my oven this bakes for about 45 minutes, but be sure to check your pancake casserole with a toothpick because all ovens cook differently. If your toothpick doesn’t come out clean, bake it for a few minutes before checking it again.
