Buffalo Chicken Foil Packets
Foil Packets are a family favorite and these buffalo chicken ones really hit the spot! Foil packets are an easy dinner recipe that can be made on the grill, over a camp fire, or even in the oven. These don’t take long to prep and cook on a grill in about 20 minutes!
Ingredients
- 1 lb Chicken breasts
- 1/2 tsp each of salt, pepper, smoked paprika, and garlic powder
- 1 TBSP ranch seasoning
- 1/2 cup mild buffalo sauce
- 2-3 large sized russet potatoes
- 1 chopped onion
- 1 large handful of broccoli roughly chopped into smaller pieces
- 1-2 TBSP olive oil
- Salt, pepper, garlic powder
- Shredded mozzarella cheese
- Chopped green onions
How to Make Buffalo Chicken Foil Packets
To make the foil packets, start by cutting up one pound of chicken breasts into cubes. Add the cut up chicken to a large bowl. Season with 1/2 tsp each of salt, pepper, smoked paprika, and garlic powder.
Next, add about 1/2 cup of mild buffalo sauce to the chicken. I like to use Sweet Baby Ray’s Mild Buffalo Sauce, but you can use your favorite brand. Stir the chicken, seasonings, and sauce together until everything is well combined.
Set the bowl of chicken aside and start working on the veggies. Wash and cut up 2-3 large russet potatoes. I cut mine into small cubes and left the peel on the potatoes. You can peel them if you want to.
Chop one onion and roughly chop a large handful of broccoli into smaller pieces. Be careful not to chop it too small because it will turn to mush.
In a bowl, add the potatoes, onions, and chopped broccoli. Season with 1-2 TBSP of olive oil and season with some salt, pepper, and garlic powder. I don’t use exact measurements for the seasonings of the veggies.
Now it’s time to start building the foil packets! Lay out a couple of pieces of aluminum foil and spray with cooking spray. Add a scoop of the potatoes, onions, and broccoli to the foil. Top with a scoop of the buffalo chicken. Tightly fold/roll up the aluminum foil to make the packets. Repeat this process until all veggies and chicken have been used. Mine made four decent sized foil packets.
Place foil packets on a hot grill over medium heat. The Buffalo Chicken Foil Packets will cook for about 20 minutes.
Once the chicken and potatoes are cooked carefully open the foil packets and top with a handful of shredded mozzarella cheese. Place the foil packets (still open) back on the grill for just a few minutes to melt the cheese.
Serve Foil Packets
Once the cheese has melted top with some chopped green onions and serve! If you want a spicier buffalo taste you can also top them with more buffalo sauce. We ate just the foil packets for dinner, but you could also serve this with a salad or with some macaroni and cheese!

- I used Sweet Baby Ray’s Mild Buffalo Sauce for this recipe, but you can use your favorite brand.
- I prefer shredded blocks of mozzarella cheese for a creamier melted cheese.
- I used russet potatoes because that is what we keep on hand, but any potatoes should work.
- These cook on a grill over medium heat for about 20 minutes, but could also be cooked in the oven at 400 degrees for 20-25 minutes or until the chicken reaches an internal temp of 165 degrees and the potatoes are tender.

Instructions
- Cut chicken into cubes and add to a bowl.
- Season the chicken with salt, pepper, garlic powder, paprika, and ranch seasoning. Add 1/2 cup of buffalo and mix until chicken is well coated in seasoning.
- Scrub potatoes and chop into smaller cubes. Chop an onion and the broccoli into smaller pieces.
- In a separate bowl add potatoes, onions, and broccoli.
- Add olive oil and season well with some salt, pepper, and garlic powder.
- Lay out a couple of pieces of aluminum foil and spray lightly with cooking spray.
- Add a scoop of the potatoes, onions, and broccoli.
- Place a scoop of the buffalo chicken on top.
- Fold and bring together the seams of the aluminum foil tightly.
- Cook foil packets on a grill over medium heat for about 20 minutes or until potatoes and chicken are cooked.
- Once the chicken reaches an internal temp of 165 degrees and the potatoes are tender carefully open foil packets and add shredded mozzarella cheese.
- Place back on the grill for a couple of minutes until the cheese melts.
- Top with chopped green onions and serve!
