Buffalo Chicken Baked Potatoes

Crockpot Buffalo Chicken Baked Potatoes are an easy dinner recipe the whole family likes! This recipe is perfect for an easy weeknight dinner because the chicken cooks in the crockpot. All you really have to do is make some baked potatoes and top them with the buffalo chicken and toppings.

Ingredients

  • 1 lb chicken breast
  • 1 TBSP of dry ranch seasoning
  • 1/2 tsp each of salt, pepper, paprika, garlic powder
  • 1/2 of a cup of Mild Sweet Baby Ray’s Buffalo sauce
  • 1 cup of shredded mozzarella
  • 2 TBS of bottled ranch dressing
  • 4 large potatoes
  • Olive Oil
  • Salt
  • Butter
  • Shredded cheddar cheese
  • Sour cream
  • 4 pieces of bacon cooked and chopped
  • 2 green onions chopped

Make Crockpot Buffalo Chicken

To start making Buffalo Chicken Baked Potatoes, get out a large crockpot and spray it with cooking spray.

Next, add 2 chicken breasts or about 1 pound of chicken to the crockpot. Season the chicken with salt, pepper, paprika, garlic powder, and Ranch seasoning. Add 1/2 cup of buffalo sauce on top of the chicken. I like using Sweet Baby Ray’s Mild Buffalo Sauce.

The seasoned chicken will cook in the crockpot on low for about 4-6 hours.

Once the chicken is fully cooked and reaches at least 165 degrees shred the chicken with two forks or with a hand mixer.

Next, add 2 tbsp of ranch dressing, 1 cup of shredded mozzarella, and a little bit more buffalo sauce to the chicken mixture. Stir well and put back in the crockpot on warm until the potatoes are done.

Make Baked Potatoes

About one hour before you are wanting to eat, go ahead and make the baked potatoes. I like to scrub four large potatoes, wash them, and poke them with holes.

Next, cover the potatoes with some olive oil and salt. I cook the potatoes in the air fryer at 400 degrees for about 40-60 minutes. It really depends on how large the potatoes are. Start checking them after about 40 minutes.

You can cook the potatoes however you normally make baked potatoes. The oven or microwave also works!

Serve Buffalo Chicken Baked Potatoes

To serve the buffalo chicken baked potatoes, cut open a baked potato and add a couple of pats of butter. Add a big scoop of the buffalo chicken mixture to the inside of the baked potato.

Top them with a small handful of shredded cheddar cheese, a dollop of sour cream, some chopped cooked bacon, and chopped green onions.

  • Once potatoes are cooked, add butter, the Buffalo chicken, shredded cheddar cheese, sour cream, bacon bits, and chopped green onions.
