Cheesy Hash Brown Breakfast Casserole
This Cheesy Hash Brown Breakfast Casserole is easy to pour together and so good!
There’s nothing better than cheesy potatoes, gravy, sausage, and eggs all combined in one delicious breakfast casserole and topped with crispy corn flakes.
This is perfect for breakfast or even breakfast for dinner and the leftover reheat well in the microwave or oven also making it a great breakfast prep. The Casserole can be baked in an oven or smoked outside on a smoker.

Ingredients
- 2 lb bag of frozen southern style/diced hash browns
- 1 lb breakfast sausage, browned
- 15 oz can of Country Sausage Gravy
- 2 cups of shredded cheddar cheese
- Salt, pepper, garlic powder
- 6 eggs, whisked
- 2 cups crushed corn flakes
- 4 tbsp melted butter
Make Cheesy Hash Brown Breakfast Casserole
To start making this recipe, brown 1 lb of breakfast sausage in a skillet. Drain all of the grease when the sausage is fully cooked.
First, spray a 9×13 smoker safe dish with cooking spray.
Next, combine diced hash browns, browned sausage, a 15 oz can of country sausage gravy, 1 cup of shredded cheddar cheese, and season well with some salt, pepper, and garlic powder.
Stir everything together well and whisk together 6 eggs. Pour the eggs over the other ingredients in the pan.
After pouring the eggs over the casserole, top with 1 more cup of shredded cheddar cheese.
Crush about 2 cups of corn flakes and stir them together with 4 tbsp of melted butter.
Lastly, pour the corn flakes over the breakfast casserole.
Smoke at 350 degrees F for about 1 hour and 10 minutes.
Bake at 350 degrees F in an oven for about an hour or until potatoes are cooked through and tender.
Serve Breakfast Casserole
Once the potatoes are tender and the eggs are fully cooked, it’s time to eat! I like to serve this casserole with ketchup or hot sauce on the side. Enjoy!

I have not tried making it in a muffin tin. I might have to test the recipe that way next time!
Can one make this ahead of time and put in the freezer to prep for busy times ahead?
Then thaw, top with the cornflakes mix and bake for same amount or what would the temp and time need to be? Looks delicious. Just trying to prep for post baby time.
I haven’t tested it, but I think if you let it thaw then top with the cornflakes it should still bake in the same amount of time.
Can you use shredded if that all you have for hashbrowns.
Shredded hash browns should also work in this recipe.

I add them frozen. You could thaw them to cut down a little bit on the cooking time, though!
