These Crockpot BBQ Chicken Ciabotta Sandwiches are easy to make and so good! We’ve been making this shredded BBQ chicken for years and it never disappoints!

I topped the sandwiches with Pepper Jack cheese, crispy bacon, and ranch dressing, but you can really customize them to your liking!

These make an easy week night dinner and the leftovers shredded chicken reheats well for sandwiches, quesadillas, and flat breads for lunch the next day.

Crockpot BBQ Chicken Ciabatta Sandwiches

Ingredients

  • 2-4 chicken breasts
  • 1 chopped red onion
  • 1 tsp each of salt, pepper, paprika
  • 1 TBSP ranch dressing seasoning
  • 1 TBSP minced garlic
  • 1 TBSP white vinegar
  • BBQ Sauce (I used Buffalo Wild Wingโ€™s Honey BBQ)ย 
  • Ciabatta rollsย 
  • Pepper jack cheese slicesย 
  • Cooked bacon
  • Ranch dressingย 

Make Crockpot BBQ Chicken

To start making this easy recipe, spray a crockpot with cooking spray. Chop a red onion.

Add the chicken, red onion, minced garlic, white vinegar, and all of the seasonings to a crockpot.

Next, pour some BBQ sauce on top. I don’t use exact measurements for this part. I usually just do enough to cover the chicken, but you can really use as much as you’d like.

For this recipe, I used Buffalo Wild Wing’s Honey BBQ, but you can use your family’s favorite brand of BBQ sauce.

BBQ Sauce

The chicken will cook on low for 4-6 hours. Towards the end of the 4-6 hours go ahead and cook bacon however you like.

My favorite way is to bake bacon in the oven at 400 degrees F for 20-25 minutes. Be sure to use parchment paper on your sheet pan for easy clean up!

Once the chicken is fully cooked shred the chicken with two forks or with a hand mixer. Stir it well and add a little bit more BBQ sauce if needed.

Ciabatta Rolls

Next, lay out the ciabatta rolls on a sheet pan and spray them with some oil. Bake in the oven at 400 degrees F for a few minutes or until they are lightly toasted.ย 

I sprayed the rolls with some South Chicago Packing Wagyu Beef Tallow Spray, but any oil or even butter would work. I get this spray on amazon if you want to check it out!

Next, add the Pepper Jack onto the Ciabatta Rolls and put them back in the oven just long enough to melt the cheese!

Serve BBQ Chicken Ciabatta Sandwiches

Once the rolls are nice and toasted, it’s time to eat! Build the sandwiches with the shredded bbq chicken, pepper jack cheese, and crispy bacon. Add a little drizzle of ranch dressing and enjoy!

I served these sandwiches with a salad and some onion rings.

This shredded BBQ chicken recipe is really versatile! These are also good on buns or day old Jimmy John’s bread if you aren’t a fan of the Ciabatta rolls.

Tips and Frequently Asked Questions

  • If you aren’t a fan of busy people garlic (jarred minced garlic) you can definitely mince fresh garlic instead for this recipe.ย 
  • When adding the BBQ sauce, I just eyeball this part. You may add as much as you would like, but I usually just add enough to cover the chicken. You can always add more when you shred the chicken if you think it needs more sauce.
  • I used Buffalo Wild Wing’s Honey BBQ sauce, but you can use your favorite kind of BBQ sauce.
  • Always cook chicken until it reaches 165 degrees.
  • Shred the chicken with two forks or with a hand mixer.
  • This recipe is also great on buns or hoagie rolls if you aren’t a fan of the Ciabatta rolls.
  • I used Pepper Jack cheese, but really any cheese you have would be good on these.
