Crockpot BBQ Chicken and Potatoes
Crockpot BBQ Chicken and Potatoes are an easy weeknight dinner recipe the whole family loves! We love easy dump and go crockpot recipes for busy days and this one doesn’t disappoint! BBQ sauce, chicken, potatoes, cheese, and red onions make up this easy meal and you probably already have most of the ingredients in your fridge and pantry!
Ingredients
- 5 small/medium russet potatoes
- 1 TBSP olive oil
- Salt, pepper, garlic powder, and paprika (for the potatoes I don’t use exact measurements)
- 1 TBSP minced garlic
- 1 chopped red onion
- 1 lb chicken breast
- 1/2 tsp each of salt and pepper
- 1 tsp each of paprika and onion powder
- 1/4 tsp red pepper flakes
- BBQ sauce
- 1 cup of shredded cheddar cheese
- Green onions
How to Make Crockpot BBQ Chicken and Potatoes
To make this easy crockpot meal, start by getting out your crockpot and spraying it with cooking spray.
First, scrub and wash about 5 medium sized potatoes. Cut the potatoes up into little cubes and add them to your crockpot. I like to leave the peel on the potatoes, but you can peel them if you would like!
Next, add about 1 tbsp of olive oil to the potatoes. Generously season the potatoes with some salt, pepper, garlic powder, and smoked paprika. I don’t use exact measurements for seasoning the potatoes.
Add 1 tbsp of minced garlic and 1 chopped red onion. Stir everything together well.
After seasoning the potatoes, it’s time to cut up the chicken. Cut one pound of chicken breasts into cubes and add it to the top of the potatoes.
Season the chicken with salt, pepper, paprika, onion powder, and red pepper flakes. This is the seasoning blend I like using for this recipe, but you could really use any of your favorite seasonings.
Once the chicken is seasoned add some BBQ sauce on top of the chicken. I like using Sweet Baby Ray’s BBQ sauce, but again you can use whatever BBQ sauce you like most. I use just enough BBQ sauce to cover the chicken.
This recipe will cook on low for 6 hours or until all of the potatoes are tender. Once the potatoes are tender add about 1 cup of shredded cheddar cheese and let sit until the cheese melts.
Serve BBQ Chicken and Potatoes
To serve this easy dinner, top with some chopped green onions and it’s time to eat! We had this with some Brussels sprouts, but any veggie would be good with it! Roasted broccoli, green beans, or a salad are some of our favorite easy sides.

- I used Russet Potatoes because that is what we typically keep on hand, but any potatoes should work. You can peel the potatoes or keep the peel on them.
- Jarred minced garlic or freshly minced garlic can be used for this recipe.

Instructions

- Cut chicken into cubes and add to the crockpot on top of the potatoes.
- Season with salt, pepper, paprika, onion powder, and red pepper flakes.
- Add some BBQ sauce on top of the chicken. I just use enough BBQ sauce to cover the chicken.
- Cook on low for at least 6 hours.
- Top with shredded cheddar cheese and let sit until the cheese is melted.
- Serve with chopped green onions on top and enjoy!
I had already tried your garlic Parmesan chicken in the crockpot and was thinking I could do it with bbq sauce and you already had the recipe for me. I appreciate your recipes cause it makes a lot of food , especially if you add in veggies and a salad. Thank you for bringing some great food to the table that is cost effective, simple, and delicious.
This was great wish I could post you a picture of how it turned out. I am currently sick and have a fever and sore throat. It was great to throw everything in the afternoon to the Crock-Pot and by the time my wife and son came home from school it was ready to go
