Crockpot Taco Soup
Crockpot Taco Soup is an easy dinner recipe the whole family likes! All you have to do is brown some ground beef and add everything else to the crockpot. We like adding sour cream and some crushed Cool Ranch Doritos on top when serving!
Ingredients
- 1 lb of ground beef
- Salt, pepper, garlic powder
- 1 chopped onion
- 1 can of corn (drained)
- 1 can of black beans (drained and rinsed)
- 1 can of diced tomatoes
- 4 oz green chilies
- 1 tbsp minced garlic
- 1/2 tsp salt and pepper
- 1/4 tsp cayenne
- 2 tsp chili powder
- 1 tsp each of cumin and dried cilantro
- 1 ranch seasoning packet
- 2 cups of beef broth
- Sour cream
- Cheddar cheese
- Cool Ranch Tortilla Chips
- Cilantro
Make Taco Soup
To start making the crockpot taco soup, heat a skillet over medium high heat with one pound of ground beef. I like to lightly season the ground beef with salt, pepper, and garlic powder.
Once the beef is browned and fully cooked drain as much grease as you can from the beef.
Spray a large crockpot with cooking spray and add the cooked ground beef, 1 chopped onion, 1 can of corn (drained), 1 can of black beans (rinsed and drained), 1 can of diced tomatoes, 1 can of diced green chilies, 1 tbsp of minced garlic, and 2 cups of beef broth.
I like to season this with 1/2 tsp each of salt and pepper, 1/4 tsp of cayenne, 1 tsp each of cumin and dried cilantro, and 2 tsp of chili powder. Add the ranch packet and stir everything together well.
Cover the crockpot with a lid and cook on high for 3-4 hours or low for 6-8 hours.
Jack-O’-Lantern Cheese Quesadillas
I made some Jack-O’-Lantern cheese quesadillas to serve with the taco soup! About 30 minutes before eating I did my best to cut out Jack-O’-Lantern faces with a sharp knife on small tortillas.
I added some shredded cheddar cheese and put these on a baking sheet covered with parchment paper.
These quesadillas baked in the oven at 400 degrees for about 10 minutes. They just need long enough to melt the cheese.
If it’s not the month of October or you aren’t feeling up to it feel free to skip this step! They are also good with normal quesadillas.
Serve Crockpot Taco Soup
Once the taco soup is finished cooking it’s time to eat! My favorite way to serve taco soup is by topping it with sour cream, crushed Cool Ranch Doritos, and fresh cilantro.

Tips and Frequently Asked Questions
- No Crockpot? No problem! This can be made in a large pot on the stove instead of the crockpot. Cook on the stove until everything is heated through.
- If you are worried about sodium use low sodium beef broth, omit the salt while browning the beef broth, and rinse all the canned corn and beans to cut down on the salt.
- I love topping this with crushed Cool Ranch Doritos, but it’s also good with tortilla chips or Fritos.
- This soup is good on its own, but we also like making some cheese quesadillas to go along with it.

Instructions
- Brown ground beef in a skillet and season with a little bit of salt, pepper, and garlic powder. Once browned drain grease and set aside.
- Line your slow cooker with a Reynolds Kitchens Slow Cooker Liner. Add ground beef, black beans, corn, diced tomatoes, green chilies, minced garlic, beef broth, the ranch packet, and all other seasonings. Stir well.
- Cook on high for 3-4 hours or on low for 6-8 hours.
- Serve taco soup by topping with shredded cheddar cheese, sour cream, cilantro, and some chips! Jack-O’-Lantern cheese quesadillas are also good served with the soup!
Made this tonight for supper and it was so good! I did add a 6 oz can of tomato sauce, 1 can of cannelloni beans and 1 can of red kidney beans to it. Just to make it a little more filling but overall it was delicious!
Very, very good. No ranch seasoning added.
