Pancake Sausage Balls

Pancake Sausage Balls are an easy and delicious breakfast recipe! My family has been making them for years and they are always on our Christmas morning menu. This recipe can be prepped the night before and baked in the morning. It doesn’t get much easier than combining pancake mix, cheddar cheese, breakfast sausage, and milk!

Ingredients

  • 2 1/2 cups Pancake Mix
  • 2 cups shredded cheddar cheese
  • 1 lb breakfast sausage
  • 1/4 cup milk

Make Sausage Balls

Preheat your oven to 350 degrees. Start by getting out your mixer and adding 2 1/2 cups of pancake mix, 2 cups of shredded cheddar cheese, 1 lb of breakast sausage, and 1/4 cup of milk to the bowl.

I used Hungry Jack pancake mix, but you can really use any pancake mix or Bisquick for this recipe.

If you don’t have a stand mixer a bowl and a hand held mixer should also work. Mix everything together until everything is well combined.

Spray a sheet pan with cooking spray or line it with parchment paper. Use a cookie scoop to scoop out the sausage ball dough and form balls. Place sausage balls on the sheet pan.

These will bake in the oven at 350 degrees for 20-23 minutes. Once the sausage balls are golden brown it’s time to eat! When I make this recipe I usually get about 30 sausage balls.

I always serve these sausage balls with syrup, but my family also really likes them with some strawberry or grape jelly. These sausage balls are always part of our Christmas morning menu because they are so easy to make and prep the night before and my kids love them!

Prep Ahead of Time

This is a recipe that can be prepped ahead of time and baked the next morning. Many times we’ve mixed up these sausage balls, placed them on the sheet pan, covered them with plastic wrap, and baked them the next morning. Prepping them ahead of time, especially for Christmas morning, makes it super easy to just put them in the oven and eat!

This recipe can be made with any pancake mix (I used Hungry Jack) or even with Bisquick! This recipe made 30 sausage balls.

        Yes these can be made ahead of time. I make several batches of these during the holidays and flash freeze them. When I’m ready to cook them i just remove what I want and bake. I never added milk until I saw Luke’s recipe. Texture of the sausage balls is much better adding milk. Thank you Luke

    1. Use your favorite. I personally use sharp because I really want that cheese flavor to pop. Mild is totally fine tho . I’ve even tried these with pepper jack. I ordered cheddar lol

    Loved these! Made them for dinner and they were a hit!
    We had some leftover and warmed them up for breakfast before school the next day and they were still great!!

    I will make this on Friday. Can they be frozen ahead of time and, if so, what do you recommend for the baking temperature and time?

    1. Ues you can freeze these ahead of time. BUT!! You want to prep them and freeze them before cooking. Mold, out them on the cookie sheet . Put the whole cookie sheet in the freezer for an hour. At that point you can put them into a bag. and freeze again. Then you can take out however many you want to cook later. They don’t taste as good if you cook before freezing. (They don’t thaw as well)

      I froze them after I cooked them and eat one in the mornings with my coffee. Five seconds in the microwave inside a paper towel, stop, then turn and five seconds more. I like mine with butter, too (just saying).

    I make them all the time, I let them cook and I put 2 together with parchment in a plastic bag, freeze and my husband takes them to work for breakfast. I microwaved them for 1 min and they’re perfect. He loves them! Plus they are so easy to make, yum 😋

  8. I use the kodiak pancake mix and found that it requires more milk (1 cup instead of 1/4). I also have found through trial and error that cooking the sausage before works better. It might just be because I’m using a protein pancake mix. I haven’t tried with regular yet.

These turned out great, but beware (I was oblivious) that not all pancake mixes are created equal… I followed this recipe using some mix from my church that calls for egg, oil, and milk, and they are denser than the just add water mixes. I had to add an additional cup of milk and another pound of sausage. It was so thick! I Ended up just spreading it across a Jellyroll pan and baking it for twice as long. Halfway through I cut into squares and flipped them. Still turned out yummy tho!!
