Grilled Cheese Cheeseburger Sliders
The name of the recipe says it all! Combine a juicy cheeseburger slider with an ooey-gooey grilled cheese and you have a sandwich that everyone will love! This recipe gives King’s Hawaiin Rolls a new twist by slicing, flipping, and grilling. If you haven’t used mayo on grilled cheese before, don’t be alarmed! I promise it will change the way you make grilled cheese forever!
Ingredients
- 12 pack King Hawaiian Rolls
- 1 lb ground beef
- 1 chopped onion
- 2 TBSP butter
- 1/2 tsp of salt and pepper
- 1 tsp each smoked paprika and garlic powder
- American cheese (approximately 10 slices)
- homemade burger sauce (1/2 cup mayo, 1/4 cup ketchup, 1/8 cup mustard, 1 TBSP sweet relish)
Prep Grilled Cheese Cheeseburger Sliders
Defrost your ground beef if it is frozen. You can set it in the sink in the morning if you remember, or defrost in the microwave while you’re prepping the onion.
Start by chopping the onion. If you use a lot of onion like I do, you can always chop a bunch ahead of time and store it in the fridge in an airtight container so it’s ready to go when you are. 1 onion generally equals about 1 cup chopped.
Set your stove to medium, melt the 2 TBSPs of butter in the skillet and add the onion when the butter is melted and the skillet is hot. The onion is caramelized when it begins to look clear, and is just a little brown around the edges. Take the onion out and set aside for later.
Make Grilled Cheese Cheeseburger Sliders
To start making the sliders, preheat your oven to 350 degrees. Cook the ground beef over medium heat. While cooking, add the salt, pepper, smoked paprika, and garlic powder.
Drain the grease and set the ground beef aside until ready to use. I usually put it on a plate lined with paper towels.
Slice the King’s Hawaiian Rolls in half and spread mayo on the inside of the rolls. Toast the rolls in the skillet mayo side down until crispy (like a grilled cheese).
Spray a baking sheet with nonstick cooking spray and place one side of the bread grilled side down. Top with a layer of American cheese, then the ground beef and onions, and another layer of American cheese. Place the other half of the Hawaiian rolls on top, grilled side up.
Bake for 10-12 minutes (until the cheese is melted and gooey).
Let cool for a few LONG minutes before cutting. Waiting is the hardest part, but the sandwiches stay together much better.
Serve Grilled Cheese Cheeseburger Sliders
We serve these sliders with sweet potato fries so my boys think they’re eating fries but are also getting a vegetable. I keep a bag of frozen sweet potato fries on hand and just pop them in the air fryer when we’re ready for them. Of course, you can always toss them in the oven next to your sliders if you don’t have an air fryer.

Tips and Frequently Asked Questions
- No smoked paprika? No problem, just use regular. I recommend adding smoked paprika to your pantry staples because it gives foods that deep smoky flavor that ground beef craves.
- As I said before, wait a few minutes before cutting. This is a good rule of thumb for pizza, too. Your toppings are less likely to slide off the crust, and it makes the pizza much easier to slice.
- If you’re like my wife and you absolutely hate to chop onions, you can buy chopped onion in the produce section of your local grocery store. You’ll pay more, but sometimes your time is worth it.
- Yes, you can use mayo on regular grilled cheese sandwiches! Once I started using mayo I never went back to butter.

Instructions
- Add the chopped onion to a skillet over medium high heat with the butter.
- Let the onions cook down until they start to caramelize.
- Cook ground beef in a skillet over medium high heat and season with salt, pepper, paprika, and garlic powder.
- Drain any extra grease from the skillet.
- Slice King’s Hawaiian rolls in half and spread mayo over the inside of the rolls.
- Toast the Hawaiian rolls in a skillet until golden brown.
- Spray a sheet pan or baking dish with cooking spray and put the rolls toasted side down.
- Add a layer of American cheese.
- Add the ground beef on top of the cheese.
- Top with the cooked onions.
- Add more cheese on top.
- Put the tops of the slider rolls on toasted side up.
- Bake at 350 for about 10 minutes or until the cheese is melted.
- Enjoy!! Dip in the homemade burger sauce!

I made these last night and they turned out phenomenal!!! I used cooper cheese and instead of grilling the Hawaiian Rolls I still put mayo on them but put them under the broiler in my oven and they toasted right up fast. Definitely making these again. Thank you so much for the recipe!!!
