Cowboy Butter Steak Bites with Air Fryer baby Potatoes are an easy and delicious dinner recipe the whole family will enjoy! The steak bites are cooked to perfection in a hot pan and melted Cowboy butter can be poured over the steak bites or used as a dipping sauce.

I like pairing the steak with Baby Potatoes made in the air fryer with a salad for a complete meal!

What is Cowboy Butter?

Cowboy Butter is a popular butter that can be used on all kinds of delicious recipes!

It’s a rich sauce that is made with butter, seasonings, Dijon mustard, lemon juice, and Worcestershire sauce.

I used all dried spices because it is what I keep stocked, but fresh herbs can also be used in Cowboy butter.

It pairs perfectly with these steak bites and crispy potatoes! Cowboy Butter can also be served with seafood, chicken, or roasted vegetables.

This is one of those recipes that is actually pretty easy to make, but it packs a big flavor and feels like a dinner that took a lot of time to prepare.

Ingredients

  • Steak, cut into cubes
  • Montreal steak seasoning
  • Oil
  • Parsley (dried or fresh)
  • Butter
  • Minced garlic
  • Salt, pepper, thyme, smoked paprika, onion powder, dried parsley, red pepper flakes
  • Lemon juice
  • Dijon mustard

Make Air Fryer Baby Potatoes

If you are making the potatoes, cut 1 bag of baby potatoes into quarters.

Add them to a bowl with some oil and season with Lakeshore Shallot & Herb seasoning.

I’ve been loving the Shallot and Herb seasonings on potatoes and even french fries lately, but if you don’t want to buy another seasoning you could use any seasoning you already have in your spice cabinet.

Salt, pepper, garlic powder, and smoked paprika is also good on Air fryer potatoes.

Pour the potatoes into an air fryer and cook at 400 degrees F for 15-20 minutes. Shake the air fryer around a couple of times while they cook.

These potatoes always come out crispy and delicious! You can top them with a little bit of dried parsley to make them look fancy.

Make Cowboy Butter Steak Bites

Cut 2 lbs of steak into cubes. Lay the steak out on a cutting board and pat it dry with paper towels. Season the steak well with steak seasoning.

I used prepackaged steak bites from Snake River Farms that my family really likes, but you could also use sirloin, ribeye, or strip steak cut into bite size pieces.

I like using McCormick Montreal Steak seasoning, but you can use your favorite steak seasoning.

Prepping Cowboy Butter Steak Bites

Heat a large skillet with a little bit of oil over medium-high heat.

Once the skillet is hot add the steak in a single layer.

Be sure to work in batches so the pan isn’t crowded. This will help ensure each piece of steak gets nice and browned.

Searing the steak bites

Cook the steak bites for about 3-4 minutes per side or until the steak is cooked to your liking.

I suggest cutting a piece of steak in half to check how it is cooked and cook the steak longer if needed.

While the steak finishes cooking, make the Cowboy Butter!

In a separate pan, melt 6 tbsp of butter with the minced garlic, salt, pepper, thyme, smoked paprika, onion powder, and dried parsley.

Add the Dijon mustard, lemon juice, and Worcestershire sauce.

Stir until well combined and the butter is melted.

Serve Cowboy Butter Steak Bites and Baby Potatoes

Once the steak is cooked to your liking and the Cowboy butter is made, it’s time to eat!

I like to top the steak with parsley. You can pour the cowboy butter over the steak bites or you can keep it on the side for dipping!

I served the steak bites with the cowboy butter on the side for dipping with the crispy air fryer potatoes and a salad.

  • To get a good sear on the steak bites make sure to use a paper towel to press out all the moisture on the outside of your beef.
  • I like to use Montreal Steak seasoning for these, but you can use whatever your favorite is making sure to season right before you sear.
  • If you want to keep the butter on the simple side you can swap out all the extras and make these garlic butter steak bites with just the garlic and parsley mixed into your melted butter.
  • I like to serve these with Air fryer baby potatoes coated in our favorite seasoning, but frozen fries, mashed potatoes, or rice would also be great!
  • If you need a different seasoning blend for the potatoes you can use salt, pepper, garlic powder, and smoked paprika or any other seasoning blend you like for veggies or potatoes.
