Crockpot BBQ Chicken Sliders

BBQ Chicken Sliders are easy to make and such a delicious dinner recipe! My family has been making this shredded BBQ Chicken in the crockpot for years. The BBQ Chicken makes awesome sandwiches, quesadillas, and stuffed baked potatoes!

Ingredients

  • 2-4 chicken breasts
  • 1 tsp each of salt, pepper, paprika
  • 1 TBSP ranch dressing seasoning
  • 1 TBSP minced garlic
  • 1 TBSP vinegar
  • BBQ Sauce (I usually use Sweet Baby Ray’s)
  • 1 12 pack of King’s Hawaiian Sliders 
  • Sliced Colby Jack Cheese
  • Shredded Cheddar Cheese 
  • 6 strips cooked bacon 
  • 4 TBSP of butter 
  • 1 TBSP of Ranch Seasoning 

How to Make BBQ Chicken

To make the crockpot shredded BBQ chicken, start by getting out your crockpot and spraying it with cooking spray.

Add two to four chicken breasts to the crockpot and season with salt, pepper, paprika, and ranch seasoning. Add 1 TBSP of minced garlic and about 1 TBSP of white vinegar.

Next, add your favorite BBQ sauce right on top of the chicken and seasonings. I usually use Sweet Baby Ray’s BBQ sauce for this. I don’t use exact measurements, just add enough BBQ sauce to completely cover the chicken.

Cover the crockpot with the lid and cook on low for about 4-6 hours. My crockpot cooks this in about 4 hours, but all crockpots cook differently.

Once chicken is cooked, shred the chicken with two forks or with a mixer. If you think it needs more BBQ sauce you can add some now and stir well.

From here you can use the BBQ Chicken to make sandwiches, stuffed baked potatoes, or even quesadillas.

Assemble BBQ Chicken Sliders

To make the shredded BBQ Chicken Sliders, slice a 12 pack of King’s Hawaiian Rolls in half. Lay down slices of Colby Jack cheese (or any of your favorite sliced cheese).

Next, add an even layer of the shredded BBQ chicken on top of the cheese. I only used about half of the chicken on the 12 count of Hawaiian Rolls. This recipe really makes enough to do 2 of the 12 packs. We saved the leftovers and made BBQ chicken quesadillas for lunch the next day!

Once the BBQ chicken is spread out evenly add some shredded cheddar cheese on top. Add about 6 pieces of cooked bacon and then add the tops of the Hawaiian Rolls back on sandwiches.

The final step to assembling the sliders is making the butter mixture! Melt 4 tbsp of butter and mix in some dry Ranch seasoning. Stir well and brush this butter mixture on top of the Hawaiian Rolls.

These sandwiches will bake at 350 degrees for about 10 minutes. Be sure to keep an eye on them so they don’t get too brown. They really just need to bake until the cheese melts!

Serve BBQ Chicken Sliders

Once the cheese has melted on the sliders it is time to eat! Carefully slice the sliders and serve them! We had these with some tater tots and roasted broccoli. These would be great with chips, fries, pasta salad, broccoli salad, or any roasted vegetable!

Tips and Frequently Asked Questions

  • I didn’t use all of the BBQ Chicken on the sliders. I probably used about half of the chicken and we saved the other half for quesadillas for lunch the next day. The Shredded BBQ Chicken recipe would make enough to do two of the 12-pack of sliders.
  • Use freshly minced garlic or jarred minced garlic for this recipe. 
  • When adding the BBQ sauce, I just eyeball this part. You may add as much as you would like, but I usually just add enough to cover the chicken. You can always add more when you shred the chicken.
  • Sometimes I also like adding a red onion to this recipe, but you can use any onions you have or even leave it out if desired.
  • Always cook chicken until it reaches 165 degrees.

  • Cook on high for 4 hours or low for 6 hours.
  • Shred the chicken, stir well, and add a little bit more BBQ sauce if needed.
  • Slice King’s Hawaiian rolls in half and add sliced Colby Jack cheese.
  • Top the cheese with a layer of the shredded BBQ chicken.
  • Add shredded cheddar cheese on top of the chicken.
  • Add at least 6 strips of cooked bacon and place the tops of the rolls on top.
  • Add 1 TBSP of ranch seasoning to 4 TBSP of melted butter. Brush the melted butter/ranch seasoning all over the tops of the sliders.
  • Bake at 350 degrees for 10-15 minutes.

I didn’t use all of the shredded BBQ chicken for the sliders. We had the rest of the chicken as lunch the next day, but it makes enough to do (2) of the 12 packs of sliders!

    400° is way too hot for the ending. Our buns came out burnt. Other than that, they had excellent flavor!

      I agree. Even with the temp amended to 350 degrees F, I only left in the oven for 8 minutes. Lovely recipe!
