Easy One-Pan Ground Beef Dinner

One-pan meals are one of my favorite dinners to make for my family! This Cheesy Ground Beef Broccoli Rice Skillet meal can be on the table in 30 minutes and is perfect for a quick dinner.

This easy beef and broccoli skillet meal is a hamburger helper style dinner made with rice. Everything cooks in one pan making clean up super easy!

Ingredients

  • Ground beef
  • Onion 
  • Salt, pepper, dried mustard, onion powder, garlic powder, Italian seasoning, and smoked paprika

  • Beef broth 
  • Jasmine rice, rinsed 
  • Broccoli florets, chopped

Make Cheesy Ground Beef Broccoli Rice Skillet

To start making this easy 30-minute dinner, heat a large skillet over medium-high heat.

While your skillet is heating up, chop one onion. Roughly chop broccoli into smaller bite-sized pieces (just be careful not to chop too small or it will completely fall apart while cooking). 

Next, add the chopped onion and 1 lb of ground beef to your skillet.

Season with salt, pepper, mustard powder, onion powder, garlic powder, Italian seasoning, and paprika. Once the ground beef is browned remove any extra grease if needed. 

Next, add the minced garlic and Worcestershire sauce.

Add the rice, broccoli, and beef broth. Bring the whole skillet to a boil, once bubbling reduce the heat to medium-low, and cover with a lid. 

Let cook covered for about 15-20 minutes or until your rice is cooked.

Add about a cup of shredded Colby Jack cheese and stir. 

Top with a little bit more cheese and cover with the lid to let the cheese melt or pop it in the oven under the broiler for just a few minutes.

Serve Ground Beef Broccoli and Rice

Once the cheese is melted, it’s time to eat! Top with a little bit of dried parsley to give your kids something to talk about at the dinner table.

This is one of those recipes that can be the whole meal, but you could also serve this with some crescent rolls, dinner rolls, or some cheesy garlic bread. A side salad would be good with this dinner.

If you have any leftovers store them in an air tight container in the refrigerator. Reheat the leftovers in the microwave until warm. Leftovers reheat well for lunch the next day!

  • I use freshly shredded Colby Jack cheese, but this would be good with cheddar cheese or pepper jack cheese.

From testing several of these rice skillet meals, I’ve found that Jasmine rice cooks consistently. It cooks fairly quickly (about 20 minutes), absorbs flavors, and stays nice and tender. You can use regular long grain white rice instead, but it may need to cook a little bit longer I need a little bit more beef broth.

Why rinse the rice?

I always rinse jasmine rice before cooking it. Rinsing the rice will help remove excess starch and result in fluffier rice instead of sticky rice. Just be sure to drain the rice well before adding it to the recipe.

Can I use frozen broccoli in this ground beef rice skillet?

Yes, frozen broccoli can be used in this recipe. I would add the frozen broccoli to your skillet once the ground beef is browned to allow it enough time to fully cook.
