Easy Smothered BBQ Chicken
This Smothered BBQ Chicken is an easy one pan dinner my whole family loves! This is a recipe you can make in about 30 minutes.
There’s nothing better than seasoned chicken topped with shredded Colby Jack cheese, chopped bacon, green onions, and tomatoes.

Ingredients
- 1 lb chicken breast
- 1-2 tbsp butter
- 1/2 tsp each salt, pepper, garlic powder, and onion powder
- 1 tsp smoked paprika
- 1/4 tsp red pepper flakes
- Buffalo Wild Wings Honey BBQ sauce
- 1 cup shredded Colby Jack cheese
- 6 pieces of cooked chopped bacon
- 3 chopped green onions
- 1 diced Roma tomato
Prep the Ingredients
Start by prepping a few of your ingredients. Cut 1 lb of chicken breasts in half lengthwise to make them thinner.
Next, cook bacon however you would like. I prefer to bake it in the oven at 400 degrees F for 20-25 minutes on a sheet pan lined with parchment paper.
Season chicken on both sides with salt, pepper, garlic powder, onion powder, and red pepper flakes. Set the chicken aside.
I also like to go ahead and chop the green onions and dice the tomato.
Make Smothered BBQ Chicken
Heat a large skillet over medium high heat. Melt 1-2 tbsp of butter.
Next, add seasoned chicken to the skillet and cook for about 4 minutes on each side or until the chicken reaches an internal temp of 165 degrees.
Once the chicken is fully cooked and golden brown, add some BBQ sauce on top of each piece of chicken. I don’t use exact measurements for the BBQ sauce. Just add enough to coat the top of each piece of chicken.
Next, top with shredded Colby Jack cheese and the cooked chopped bacon.
Bake in the oven under broil for just a couple of minutes to melt the cheese.
Serve Smothered BBQ Chicken
Once the cheese is nice and melted top the chicken with chopped green onions and diced tomatoes. I served this with some easy oven roasted potatoes and broccoli.
This would also be great with mashed potatoes, salad, or any other vegetables you like.
Tips and Frequently Asked Questions
- Always cook chicken until it reaches at least 165 degrees with an internal meat thermometer.
- Use your favorite brand of BBQ sauce for this recipe. I used Buffalo Wild Wings Honey BBQ sauce.
- I used shredded Colby Jack cheese, but shredded cheddar, or even pepper jack cheese would be good on the chicken.
- The red pepper flakes add a nice kick of heat, but it’s definitely not spicy. If you aren’t a fan of the heat you can leave the red pepper flakes out.
- If you don’t have an oven safe skillet you could let it sit on the stove covered with a lid to help the cheese melt.
