Southwest Ranch Chicken Tortellini is an easy and delicious dinner recipe that I love making on my flat top griddle. This one is wife and kid approved and is easy to prep ahead of time for a quick dinner any night of the week.

If you don’t have a griddle, this one could easily be made on the stove top for a simple and delicious dinner!

Southwest Ranch Chicken Tortellini

Ingredients

  • 1 lb chicken breast
  • 1/2 tsp each salt and pepper
  • 1 tsp each paprika, cumin, onion powder, and garlic powder
  • 1/4 tsp red pepper flakes
  • Olive oil
  • 1 onion
  • 2 green bell peppers
  • salt, pepper, garlic powder (for the veggies)
  • 16 oz bag frozen Cheese Tortellini
  • Buffalo Wild Wings Southwest Ranch sauce
  • 1/2-1 cup of water to soften veggies and tortellini

Make Southwest Ranch Chicken Tortellini

Slice your peppers, onions, and chicken breast into thin strips and preheat your griddle or skillet to medium high heat.

Add a drizzle of oil to the hot griddle and add on the veggies seasoning with salt, pepper, and garlic powder.

I like to drizzle a little water over the top and cover them up so the steam can help soften them faster.

While the veggies are cooking add another drizzle of oil to the other side of the griddle and add the chicken breast.

Season the chicken with salt, pepper, paprika, cumin, onion powder, garlic powder, and red pepper flakes.

Let the chicken cook until it reaches an internal temperature of at least 165 degrees with a meat thermometer.

Once the veggies have softened and the chicken is cooked through stir them all together and lower or turn off the heat.

Southwest Ranch Chicken Tortellini

Add a small drizzle of oil to the griddle and place your tortellini over the top of the oil. Squirt on about 1/2 a cup of water and cover those up to soften for about 5 minutes.

I prefer to use frozen tortellini because the extra moisture allows them to cook faster. If using shelf stable tortellini, add more water in intervals and stir every couple of minutes until cooked through.

Once the tortellini has softened drizzle on the Southwest Ranch and stir until they are all coated.

I use just enough of the Southwest Ranch sauce to coat the tortellini. I used maybe half of the bottle, but you can really use as much or as little sauce as you’d like!

Serve Southwest Ranch Chicken Tortellini

Once everything is cooked to your liking, stir everything together and serve! I didn’t serve any extra sides with this, but a salad or some garlic bread would be good with it.

Tips and Frequently Asked Questions

  • I prefer to use frozen tortellini when cooking them on the griddle, but the shelf stable tortellini will work adding extra water and stirring every few minutes.
  • Always cook chicken until it reaches at least 165 degrees F with an internal meat thermometer.
  • I used a little bit less than half the bottle of Buffalo Wild Wings Southwest Ranch sauce, but you can use as much or as little of the sauce as you’d like!
  • If you aren’t a fan of spice leave out the red pepper flakes!
  • If you don’t have a griddle this can be made inside on the stove. I would cook the chicken and veggies in a skillet and boil the tortellini following the directions on the package. Combine everything and add the Southwest Ranch sauce.
