Cheesy Party Potato Casserole

Where I’m from you can’t throw a party or gathering of any kind without there being a good potato casserole. This is a fun spin on one of my family’s favorite Funeral Potatoes that’s the perfect easy side to take to a party.
These cheesy potatoes can be made on the smoker or in the oven!

Ingredients
- 2 lb bag of frozen southern style/diced hash browns
- 16 oz of French onion dip
- 1 can of cream of chicken
- 1 stick of melted butter (divided)
- 2 cups of shredded cheddar cheese
- 1/2 tsp each of salt and pepper
- 1 tsp each smoked paprika, onion powder, and garlic powder
- 2 cups of crushed Ruffles
Make Cheesy Party Potato Casserole
To start making this recipe, spray a 9×13 smoker safe dish with cooking spray. Combine diced hash browns, French onion dip, cream of chicken, 1/2 of the melted butter, 1 cup of shredded cheddar cheese, salt, pepper, smoked paprika, onion powder, and garlic powder.
I like shredding my own cheddar cheese for a creamier consistency. Check out the cheese grater I love on amazon!
Next, mix together the ingredients together well and spread out evenly in the pan. Top with 1 more cup of shredded cheddar cheese.
After adding more cheese, crush about 2 cups of ruffles chips and spread over potatoes. Pour the other half of the butter over the top.
Finally, this recipe can now be baked in the oven or smoked on a smoker. To make them on the smoker, Smoke at 350 degrees for 1 hour or until potatoes are cooked through and the top is nice and crispy.
To make them in the oven, bake at 350 degrees uncovered for about an hour or until potatoes are cooked through and tender. Sometimes it takes closer to an hour and about 10-15 minutes, but all ovens cook differently, so I recommend checking them at about an hour.
Serve Cheesy Party Potato Casserole
Once the potatoes are tender and the chips are nice and golden brown, it’s time to eat! I served these with some smoked pork steaks and baked beans.
We also love them with smoked ribs, French Dip sandwiches, or smash burgers!
Tips and Frequently Asked Questions
- Once the potatoes are removed from the oven, let them sit for about 5-10 minutes because they will be piping hot.
- Shred your own block of cheddar cheese. Trust me, the cheese melts creamier and I think it even has a richer flavor.
- Use unsalted butter to lower the sodium content in this recipe.
- These cheesy party potatoes pair well with smoked meats like ribs, pulled pork, brisket, ect.
- Another side we love to serve alongside these cheesy potatoes is broccoli salad.
- This recipe can be prepped ahead of time and stored in the fridge. Just wait to top with the chips and butter until right before baking/smoking it.
