Chicken Bacon Ranch Potato Skillet
This Chicken Bacon Ranch Potato Skillet is an easy meal for a weeknight that my family loves! My kids can be kind of picky with dinner, but they love this one. This recipe doesn’t take a whole lot of ingredients and we almost always have the stuff to make it. This one is also great for a weeknight because it can be made in about 30 minutes from start to finish!
Ingredients
- 2 chicken breasts
- 4 medium/large potatoes
- olive oil + salt, pepper, garlic powder, paprika (for potatoes)
- 1 tbsp ranch seasoning
- 1/2 tsp each of salt and pepper
- 1 tsp paprika
- 6 strips of bacon
- 1 cup of shredded mozzarella cheese
- Ranch dressing
Make the Potatoes
To start things off just scrub the dirt off a 4-5 Russet potatoes and then cube those up into bite sized pieces. Then those are going to go into a large bowl along with some olive oil, salt, pepper, garlic, and paprika.
Once all of your potatoes are evenly coated they are going to cook in the air fryer at 400 degrees for about 25 minutes. If you don’t have an air fryer you could do the same thing in a 400 degree oven for 30-40 minutes flipping halfway through!
Make the Chicken and Bacon
While the potatoes are cooking place 6 strips of cubed up bacon into a skillet over medium heat. Let that cook until the bacon is nice and crispy and then remove it from the pan along with most of the grease!
Leave a couple tablespoons of the bacon grease in the skillet and add in a pound of cubed up chicken breast. Let that cook over medium heat until golden brown and cooked through seasoning with the seasonings above! Once the chicken comes to temp lower the heat and stir in a tablespoon of minced garlic.
At this point the potatoes should be finished cooking so you’ll just pour those into the skillet and stir everything together. To finish things off just top the skillet with some freshly shredded mozzarella cheese and the bacon from earlier. Then just pop that in the oven at 400 degrees for a couple of minutes to melt the cheese!
Serve Chicken Bacon Ranch Potato Skillet
Once the cheese has melted just remove the chicken bacon ranch potato skillet from the oven and drizzle on some ranch dressing! This meal is great on its own so we usually just serve it with a canned/frozen veggie or a side salad.

Tips and Frequently Asked Questions
- Always cook chicken until it reaches an internal temperature of 165 degrees.
- If you don’t have an air fryer you can cook the potatoes in the oven at 400 degrees for about 25 minutes or until they are cooked to your liking. It helps to flip/stir the potatoes around about half way through cooking.
- I used freshly shredded mozzarella cheese, but cheddar or your favorite kind of cheese would also be good!
- Serve this with a salad, green beans, or some kind of roasted veggie.

Instructions
- Wash potatoes and cut up into cubes. Toss the potatoes in a bowl with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).
- Cook potatoes in the air fryer at 400 degrees for about 20-25 minutes shaking them around at least a couple times while they cook.
- Once potatoes are cooking, chop strips of bacon and cook the bacon in a skillet over medium high heat. Remove bacon from the pan and leave only 2 tbsp of the bacon grease on the skillet.
- Cut chicken into cubes. Add the chicken to the hot skillet. Season with salt, pepper, paprika, and ranch seasoning. Once chicken is cooked remove the pan from the heat.
- Once the potatoes are finished cooking add potatoes to the skillet. Stir well and top with about a cup of shredded mozzarella cheese. Top with the cooked bacon.
- Broil in the oven for just a couple minutes to melt the cheese (you could also cover with a lid and let this sit on the stove until cheese melts).
- Top each plate with some ranch dressing. Enjoy!
Could you fry the potatoes instead of air fryer cuz I don’t have one
I have made one similar to this where I roasted my potatoes in the oven but I’m sure you could probably fry them also I don’t see why not
I cook this in the oven. Potatoes first for @ 40 mins. Then add the chicken for @ 20 mins. I cook the bacon on the stove.

We had this for dinner last night and it was so good! I used monterey jack and cheddar because that’s all that I had and I also added diced onion after melting the cheese, which added a nice crunch and flavor.
