Loaded Hash Brown Breakfast Casserole is an easy and delicious breakfast recipe that is perfect for the holidays or a special weekend breakfast!

This recipe has all of the breakfast ingredients you could ask for in an easy dump and go casserole. It’s also easy to prep ahead of time so you can enjoy more time with family on those special mornings!

The casserole is made with shredded hash browns, sausage, country gravy, cheddar cheese, and bacon.

Ingredients

  • 2 lb bag of frozen shredded hash browns
  • 1 lb cooked and drained sausage
  • 12 oz cooked chopped bacon
  • salt, pepper, garlic powder
  • 2 cups shredded cheddar cheese
  • 1 package Pioneer Country Gravy Mix
  • 2 cups water
  • 6 eggs
  • 2 chopped green onions

Make Loaded Hash Brown Breakfast Casserole

Place your bacon on a baking sheet and bake at 400 degrees F for about 25 minutes. While that cooks brown the sausage in a skillet over medium heat and remove any excess grease.

Once the bacon is cooked to your liking remove any excess grease and chop it into small pieces.

Grease a 9×13 baking dish and add the hash browns, cooked sausage, chopped bacon (save a little bit of the bacon to top the casserole), and a cup of cheddar cheese. Season with salt, pepper, and garlic.

Mix the Pioneer Country Gravy Mix with 2 cups of water following the directions on the package.

Pour the gravy over the casserole mixing everything together and spreading it out evenly.

I used the Pioneer Country Gravy Packet, but you can really use any gravy you like. Canned or homemade gravy should work in this recipe. You just need about 2 cups of white gravy.

Whisk together 6 eggs and pour them over the top of the casserole. Make sure the eggs are all spread out evenly on top of the casserole.

Next, sprinkle another cup of cheddar cheese over the top.

Bake at 375 degrees F for about 45 minutes or until the eggs and hash browns are cooked through!

Once the potatoes and eggs are fully cooked, top the breakfast casserole with a handful of the chopped bacon you saved earlier and some green onions. Serve and enjoy!

  1. Do the hash browns make the casserole watery? I fixed something like this before and it had a good flavor but was so watery. Thank you

    1. The casserole was not watery. If you are worried about it you could always fully thaw the hash browns first making sure to remove any extra liquid, then assemble and bake the casserole. It may take a little less time to bake. Hope this helps!
