S’mores Cookie Bars

S’mores Cookie bars are a delicious dessert recipe that are perfect for all those summer BBQ’s and get-togethers! These cookies will disappear real quick at any gathering. I made them using my favorite chocolate chip cookie recipe, but added mini marshmallows, graham crackers, and Hershey chocolate instead of the chocolate chips.

Ingredients

  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 stick (1/2 cup) unsalted butter
  • 6 Tbsp granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 4 chopped Hershey Bars
  • 1 cup mini marshmallows
  • 5 graham crackers chopped

Make S’mores Cookie Bars

To start making S’mores Cookie Bars, preheat your oven to 350 degrees. Next, combine butter, sugar, and brown sugar in a large mixing bowl. I like using my kitchen aid mixer for this. Mix together until everything is well combined.

Next, add the egg and vanilla extract. This will be mixed until everything is smooth.

In a separate bowl, combine flour, salt, and baking soda. Slowly incorporate the flour mixture into your dough being careful not to over mix.

Lightly chop Hershey bars and Graham crackers on a cutting board. Stir in the chocolate, Graham crackers, and mini marshmallows with a spoon. Using a spoon ensures the graham crackers, chocolate, and marshmallows don’t get crushed from the mixer.

Now that the dough is ready, refrigerate the cookie dough for about 30 minutes. I know it’s tempting, but don’t skip this step!

Finally, grease a 9×13 baking dish and lay down a piece of parchment paper inside the dish. Pour the cookie dough into the dish. Use a spatula to press the cookie dough into the dish and make it even.

After pressing the dough into the baking dish, the S’mores Cookie Bars will bake for about 25 minutes at 350 degrees. I like to check the center with a tooth pick. Bake the cookies until a toothpick comes out clean.

Serve S’mores Cookie Bars

Allow the cookies to cool completely before cutting and serving them. I cut the cookies up into 12 large bars. Serve these S’mores Cookie Bars with a big glass of milk or a scoop of vanilla ice cream on top!

  • Allow cookies to cool completely. Cut into squares. I cut these into 12 large bars, but you could cut them smaller to serve more people.

Notes

This recipe can also be made into individual cookies by using a cookie scoop to scoop the dough instead of pouring it into a baking dish. If making individual cookies, place cookies on a cookie sheet lined with parchment paper and bake at 350 degrees for 12-15 minutes. Allow cookies to cool completely before serving. Using a large cookie scoop this recipe made 12 large cookies.

  1. Do you think this can be done in air fryer? I thought I asked but I don’t think I did. My oven broke so I use air fryer for now I can coverage temperatures for a lot of things but cookies/brownies scare me lol

I actually doubled the recipe to make thicker bars for a housewarming (actually used just over 1 1/2 of the recipe for the bars and made cookies with the rest) everyone LOVED them! I’ve tried making s’mores cookies before, but they just didn’t come out as well as these, thanks again 😊

    This recipe has repeatedly received 5 stars in our family! We like to loosely cover the baking dish with tin foil while it bakes and then remove for the foil last five minutes to lightly toast the marshmallows.
