Strawberry Cake Mix Cookies are easy to make and so good! These are an easy dessert recipe and would be perfect for a Valentine’s Day treat to make with your kids.

Strawberry Cake Mix, Vanilla Frosting with sprinkles, eggs, and oil are all that’s needed to make these cookies!

Ingredients

• 1 box Funfetti Strawberry Cake Mix
• 2 eggs, whisked 
• 1/3 cup oil
• Funfetti Valentine’s Day Vanilla Frosting

Make Strawberry Cake Mix Cookies

Preheat oven to 350° F. Add strawberry cake mix, 2 whisked eggs, and oil to a bowl and stir well. This will be thick, so it might take a little bit to get it all incorporated. 

Use a cookie scoop to scoop out cookies onto a baking sheet lined with parchment paper. Bake for about 12 minutes. 

Let cookies cool for 5-10 minutes then spread frosting on top. I used a piping bag with a cake tip to pipe the frosting onto the cookies, but you can also just use a spatula to spread frosting on the cookies.

Top with the Funfetti sprinkles.

Overall these cookies stay pretty soft, but as they cool they will start to set up.
